Mexican Corn

I sauteed fresh garlic and the jalepeno peppers in olive oil, then added the corn and cream cheese and a pinch of salt. Very tasty. Kind of reminded me of the corn that is sold off of the cart with mayo and parmesan cheese.

Vera Cruz Tomatoes

I hate tomatoes! But this dish was outstanding!!! I made these last night for my daughter-in-law's birthday dinner (paired with pork chops and garden salad) and both her and my son (who is a chef) said they were DELICIOUS! I did use ricotta as another person had suggested, also added fresh garlic when sauteeing my onions and also added some pepper jack cheese into the mixture and on top which gave it a nice spice and helped since I forgot to add the pepper sauce. I used fresh spinach and did not salt the tomatoes until right before filling and they were not watery at all. Absolutely beautiful presentation. I think I will use small halved roma tomatoes next time and serve as an appetizer using the same mixture to fill some mushrooms for the non-tomato lovers like myself (though this recipe had me sold)... Thanks for the recipe!

Pan-Seared Tilapia

Very good. I am on a diet but really wanted some fried fish and this did the trick. I used cooking spray instead of oil to cut down on the fat even more. I think using the oil would have added to the crunchiness factor, but it was still really delicious! Thank you for the recipe. Oh, and used some old bay seasoning - flavor was just lovely!

Salsa De Tomatillo

I made this last night and it was very good, I didn't measure anything just kind of eyeballed it and it still came out great! Salsa verde is my favorite on tacos, nachos, burritos and now I can make my own. I used mine on salmon and tilapia tacos and it was lovely. Thank you for such a simple a delicious recipe. Will be making all the time!

Quick Chicken Stew

this was delicious, I did make a few changes. I cut down the tomatoes and added a can of chicken stock as some other reviews suggested. Also, after browning the chicken I removed from the pan and made a rue with the onions and garlic, this made the stew nice and thick. I also added an assortment of bell peppers, mushrooms, cabbage and cilantro and some cumin. The kids and hubby loved it. Will definetly make again!
