Grandma's Homemade Banana Bread

Very good basic bread. Did not have milk so I dolloped in sour cream, used a mix of brown sugar and white. Don't tell Grandma but I also splashed in 1/4 cup Spiced Rum by Captain Morgan. Wanted to bake the bread fast so used a muffin tin and baked for 20 min at 375 Degrees.

Enchanted Sour Cream Chicken Enchiladas

Good basic recipe. Make it better by mixing a cup of green enchilada sauce to the chicken mixture. Use the rest of sauce to drizzle over top before baking. Don't sprinkle cheese over top until baked, add when taking from oven then let sit to melt. Yummy!

Cranberry Orange Bread

Just made this into muffins. Added extra (melted) butter and twice the orange zest cuz we like it that way. Very yummy, will make again for holidays.

Quick Chicken and Dumplings

Mom made this all the time when us kids were growing up (I'm 60 now). So glad to see the recipe here. Only thing different is that I use raw boneless chicken cut into pieces. It's done just right in the time it takes for dumplings to cook. I do add what ever veges I have on hand, usually organic carrots and green beans. Remember, you need the beginning liquid to be thin, it thickens up when the dumpling are finished cooking. Yum.

Cranberry Nut Bread I

Made this last night and half is already gone this morning (yum!). We added an extra egg and subbed applesauce for oil. Gosh people, the recipe is perfect, don't add as many nuts or berries if it's too much for you. If it's too crumbly, then you over-mixed. Always set timer for ten min. early so you can start checking to see when the bread is ready to come out.

Easy Pressure Cooker Pot Roast

Used an electric pressure cooker, set timer for 55 minutes. Roast was very tender, fall-apart. Garlic cloves stuck into meat gave extra flavor. We cooked vegetables in a pot of boiling water while roast was cooking. That way the vege's can be pierced with a fork and you'll know when perfectly cooked.

Calzones In a Pinch

Very good! As the other review said, you could tweak the filling and it would still be an easy, yummy calzone. We liked the pie crust vs a pizza doughy bread crust. Next time I'll add pepperoni bits instead of chicken, maybe even add pineapple bits :-)

Skillet Chili

Not a bad chili at all. I subbed a can of tomato soup for the paste cuz we like sissy chili. Also charred a bag of frozen vegetables to add. Oh, also added garlic, cannot eat chili without some garlic cooked in. :-)

Pumpkin Cheese Bread II

Baked this tonight. Did not have the citrus zest so used one teaspoon of vanilla in the pumpkin batter. I also substituted one teaspoon each of pumpkin pie spice and all spice. Oh my goodness, this turned out really good. Baked mine in a Bundt pan and it worked beautifully. It was good warm from oven and bet it will taste even better once cooled off and refrigerated. Husband wants me to bake this for a pot luck at his work ;-)

Cranberry Raspberry Sauce

Used Apple juice instead of wine and ended up using a full cup of sugar. The raspberries make this WOW! I would like to try this drizzled over a slice of cheese cake ;-). Gonna make this for Thanksgiving every year from now on. Hope there's enough left over to use with a pork roast too.

Easy Chicken and Dumplings

Just like mom used to make, true comfort food. Hubby doesn't like celery so I stir in a can of flat Italian green beans just before dropping the dumpling mixture onto the bubbling stew. You may season this to your own tastes and enjoy ;-)

Chili Rellenos Casserole

Very good if you use enchilada sauce vs tomato sauce. Added cooked ground beef cuz my hubby wants meat in his supper meal. A deep dish pie plate is what I bake mine in. I'm taking two of these to a pot-luck and bet both will be devoured quickly ;-) Thanks for a great recipe!

Impossible Pumpkin Pie

Made this today, it is very delish! I did use bisquick instead of flour plus a whole can of the evap milk. Also used brown sugar instead of white. Pie is in the fridge setting up. Tasted already and ohmygoodness, it's the best pun'kin pie ever. I'm sure it would be good as written, I just have fun playing with ingredients.

Six Can Chicken Tortilla Soup

Yes, as other reviewers said- doctor it up. I used one can of low sodium broth, one can lower sodium cream of broccoli soup and one can mild red enchilada sauce (add more broth or water to get desired consistency). If ya have time add some sautéed onions and grated carrots. So many different vege's you could add depending on growing season.

Jalapeno Ranch Salad Dressing

First, I had to learn what a tomatillo is (LOL). Recipe is perfect for salad or dipping. We dipped chicken fingers and even the fries. Did anyone mention using this as a sandwich spread? Yummy on roast beef and turkey or chicken !!!

Pork Carnitas

Cooked this in electric pressure cooker after browning pork and vege's in oil. (I cut pork into 1 inch cubes and sprinkled with flour). Did not have all the spices so added a jar of salsa and it made a very yummy sauce. We spooned sauce and pork right out of the cooker over rice. Topped with chopped onions and tomatoes, grated cheese and dollop of sour cream. Sooooooo good, husband really enjoyed.

Gramma Bertha's Banana Cake

Made this in a bundt pan. As others said, you may not want to bake the full hour. I set timer at 40 min. and it was done. (I always set a timer shorter than time calls for then check). Added salt and vanilla, also yogurt instead of sour cream. Turned out yummy, did not need frosting. Thanks Gramma !

Fun food, especially for the grandkids. You can dress these up with chopped green onions, chilies, corn, chopped avocado..... what ever you like. Next time we will try chopped cooked chicken or pork instead of beef.
