Coconut-Raisin Rice Pudding

Pretty good. I made some changes: Decrease milk by 1/2 c, decrease nutmeg to 1/2 t, add cinnamon 1/2 t, add ginger 1/2 t, used brown rice. Sprayed my muffin tins and used a scant 1/2 c in each cup. Made 20 servings. Next time I will serve with a carmel sauce and whipped topping.

Apple Coffee Cake

Made a few changes: added 1T milk, used 4 med apples (approx 2 1/2 c chopped), added 2t cinnamon to batter, substituted margarine for shortening, substituted peach yogurt for sour cream. Omitted topping on half, added chopped pecans to half. Dropped by Tablespoon into greased muffin pans, made 24 muffins, baked for 25 minutes. Very versatile, quick, and works well with what's on hand.

Jalapeno Jelly

WEAR GLOVES...'nuff said about that. I doubled the recipe and added 24t powdered pectin at the beginning. I put most of my peppers in the blender with 1C regular distilled vinegar and pureed them. I finely chopped the rest. I put all of it in the pot and cooked it until I had a rolling boil and canned them. I yielded 9- 8oz jars. Wish I had thought ahead to use 4oz jars instead. They turned out perfect! May try red and yellow bell peppers next time just to jazz it up.

Best Bread Machine Bread

This bread is incredible! So soft! My husband said it was too soft. Is that possible? There were no leftovers so I don't know if it stiffens up the next day. LOL. I added herbs to mine. I will never load my bread maker the same again. You just have to proof the yeast first.

Dump Cake I

This cake is very easy, super quick, but just OK. Nothing wonderful or spectacular. I couldn't say this is a good cake recipe for when I don't have eggs because I don't normally have pie filling on hand. I stirred the butter and pineapple juice into the cake batter and spread it on top to avoid the dry spots others complained about. The cake is a bit crumbly.

Jambalaya Casserole

YES--YES--YES!! This is the recipe you want to hold on to. I had to prepare a meal for a church event, about 40 people, 30 or so of those were kids. I thought about all the things I could make and considered Jambalaya. I found this recipe and got to work. Short of time I could not find browning, so I omitted that. I used parboiled rice but still cooked it for about 50 minutes. I added two cans of stewed, diced tomatoes. I would add more next time just because I love tomatoes and this recipe isn't very tomato-ey. I served the Louisianna Hot Sauce on the side. The adults ate it up, the kids ate it up! You just can't do better than that. Not spicy at all for those who didn't opt to spice theirs up. And did I say how fast I was able to whip this up? The majority of the prep time was chopping veggies.

Mom's Ginger Snaps

Pretty good. Look store bought, but the taste is far from processed. I would use no cloves next time, I didn't care for the scent or the taste of cloves in the cookies. The recipe is very easy. I use a small mellon baller to pull off pieces of dough and pressed them with the bottom of a sugar coated measuring glass. They look beautiful. I didn't give the recipe five stars because something is "off". Can't put my finger on it. Maybe the lack of flavor from the fat? the oil just does nothing for this cookie.

To Die For Blueberry Muffins

Taste=5 stars -2 stars for the mess in my oven! These muffins are easy to make and taste delicious, but they "boiled" over... Maybe the topping is too butter heavy in the topping, when I do this one next time I will cut the butter in half and though I made 12 regular size muffins, maybe I should make 18.

Banana Banana Bread

Very good! I made a few changes. I added 1t baking powder, 1t cinnamon, 1/2t nutmeg, 1 1/2t vanilla. I made them into muffins and got 19 muffins. They cooked at 25 minutes. Very moist and delicious.

WWII Oatmeal Molasses Cookies

Pretty good and super easy. I made a few adjustments... I cut the white flour in half and added 1 C whole wheat flour Added one additional cup of oatmeal I made half the batch with chocolate chips, the other half with raisins and chocolate chips I used regular unsulphered molasses, no light molasses in the pantry I only gave it four stars because the flavor is pretty plain. I'm going to play with this one some more, maybe cinnamon and butter instead of shortening.

Microwave Caramel Popcorn

Maybe I'm just used to how it comes out when you put it in the oven and make caramel corn the "old fashioned way", because this kind, just isn't great. I wanted something sweet and quick for the kids and this fit the bill, but the recipe didn't make it to the recipe box. Next time I'll candy my popcorn the way I popped it-- without the microwave. BTW 4 quarts popped corn is about 1 C Kernels

Cincinnati Chili I

I made a few changes and this chili turned out really good. I used a chuck roast and cut it into small pieces and I omitted the chocolate,not because I didn't want to use it, but because I didn't have any on hand. Anyway, I simmered it until that beef got really tender-- and wow! Because my husband doesn't like chili with beans and I do, I cooked some black beans on the side to add to mine... delicious :)

Quick Coffee Cake

Unlike some others, I didn't read the reviews before I decided to make this coffee cake Christmas morning. It has a great rating and I had all the ingredients on hand. Well, I woke up early to start. The batter seemed terribly thick and more like cookie dough, but I spread it in the pan as best I could. The kids were up shortly thereafter and we waited nearly 40 minutes for this cake to bake. We added 5 minute intervals to the 15 minute cook time, checking with a toothpick. At one point I thought it was done and it was just the topping sticking to the toothpick...nope! Raw in the middle. When it was finally finished I had a very dense cake. It was edible and the kids were famished, but we had to break it apart for my 2 year old twins, it was too tough for them to bite off on their own. There was one piece left over and within hours it was hard as a rock. I think, even with suggestions of others, I won't try this recipe again...

Banana Crumb Muffins

These are the most beautiful muffins. I got a whole dozen really big muffins by adding one more banana and beating the egg, salt, soda, and baking powder in with the bananas then added them to the flour and sugar.
