Summery Corn Salad

My whole family loved this! I made this to go with blue corn chips for a card party. I'm lucky the dish made it there. LOL! The only thing I changed was I used frozen corn instead of corn on the cob (out of season) and I baked it in the oven instead of the grill. Thanks for the recipe!

Magic Peanut Butter Middles

Not worth the effort as is. The finished chocolate portion is way too dry, which made it very difficult to wrap around the peanut butter mixture. Other reviewers suggest some solutions for this, but I am not going to put the effort in again. I also thought the taste was a little bland.

Garlic Prime Rib

This was great! I had never made prime rib before because that cut of meat is so expensive and I didn't want to waste it. I didn't change anything in the marinade/recipe. I made it for my parents 40th anniversary surprise dinner. Everyone ate and loved it, even the kids!

Strawberry Jam

OMG good!! This was loved by all. I used 7 cups of the chopped strawberries (no cranberries on hand), 7 cups of sugar, 1 package (1.75 oz) of powdered pectin, and juice of a lemon. I followed the cooking directions exactly and put the jars in a water bath for 5-10 minutes. This made 8 half pint jars of preserves.

Fried Rice Restaurant Style

This was okay. I think it'll be a nice base for what I'm looking for. I agree with another reviewer that the vinegar is too much. I will make this again and cut the vinegar down. I did get some very nice comments about it at the cookout I took it to.

Easy OREO Truffles

Wow! Good! Easy to make! My daughters helped me make the balls and loved it. Of course they had to try one and make sure that their work was quality :). Many other reviewers stated that they had problems with the balls falling apart when they were coating them. I did not have this problem at all. Just make sure that when you roll the cookie/cream cheese balls, you roll them until they are solid. I told my daughters it was like playing with playdough. I used white coating and reserved a small amount. I colored the reserve coating green for St. Patty's Day and made criss-crosses over the tops. They looked store quality! You could use any color if you use the white. You can also use different sandwich cookies for different flavors. I'm going to make them in the shape of eggs for Easter!

The Best Chocolate Cake You Ever Ate

This was a hit! Everyone loved it. I followed the recipe exactly the first time to get a good feel of how the base flavor tasted. The cinnamon gave it a very interesting/good kick of flavor. I may try this recipe without the cinnamon once to taste it without. I did make one change. All of my chocolate baked goods recipes, I substitute cold coffee for the liquid. So, for the 1 cup of water, I added 1 cup of cold coffee instead. It brings out even more chocolate flavor. This recipe is a keeper.

Butter Bean Burgers

This was not a favorite for us. However, we are not used to eating meatless burgers. Also, I thought it had a better flavor before cooking. My daughters liked it ok. But I found that the largest problem was the difficulty of keeping the mixture together, particularly while flipping. I was careful, so they did not fall apart completely, but it wasn't easy.

Stuffed Strawberries

These were very good! I used french vanilla liquere instead of the orange. They still turned out great! I think next time I will make these using vanilla extract in place of the liqueur for the kids.
