Pinto Beans With Mexican-Style Seasonings

Delicious Black Bean Burritos

Great recipe!! I mostly followed it except I omitted the jalapeño an instead added a can of rotel tomatoes with green chilies, a handful of fresh spinach, and one red potato that I diced and roasted in the oven with cumin, chili powder, salt and pepper. I served this on small corn tortillas warmed on the stove top. Super yummy!!!

I followed another reviewer's tips of adding a little vanilla and almond extracts and cream cheese to the cherries, as well as subbing almonds for the pecans. Super easy and yummy!!

Fruited Curry Chicken Salad

Delicious and versatile recipe! I made it as written the first time (but with red grapes instead of green due to personal preference), which was fantastic! I liked it so much I made it again two days later with only half of the ingredients (no green onions, celery or apple) and it was still amazing. I ate it as a sandwich and on it's own and prefer the latter, although I bet it would taste great on a croissant...

full rich flavor--so delicious! i made a few veggies changes based on preference and what i had on hand. the only main differences in the way i cooked it was to put uncooked orzo pasta in during the last 30 minutes of simmering and to add a chunk of parmesan (diced) to the soup at the same time.

Russian Cabbage Borscht

Made this for the first time yesterday and am still eating and loving it! I didn't have any tomato puree, so I added a can of diced tomatoes instead. I also added a lot more vinegar and dill, but only because I really really love those flavors. Don't leave out the caraway seeds--they really add another great dimension to the dish! I had difficulty slicing my beets thin enough and some still came out hard, but that's a problem with me, not the recipe. :) I will try grating them next time as another reviewer suggested.

World's Best Lasagna

I made this without sausage, because I didn't have any, and even forgot to add the egg to the ricotta, but it still came out wonderful! This recipe really is simple if you make it the night before, and is the best comfort food! Yummy! I'll be making it again and again.

Melt in your mouth amazing! I followed others' suggestions and added a can of creamed corn and reduced the sour cream to a 1/4 cup. So delicious! I'll be making this recipe often. Thanks!

French Beef Stew

SO yummy! I followed other reviewers' suggestions and used only 1 can of tomatoes, but added 1 onion, a few stalks of celery, a healthy splash of red wine, worchestershire sauce and the full amount of mustard. I simmered it for about 1.5 hours--the meat came out perfectly and the flavor was deliciously complex and layered! The best! I will make this all the time. :)

Kingman's Vegan Zucchini Bread

You'd never know this was vegan! I made this for a work potluck, and everyone raved about how flavorful and moist it was! I added maybe half a shredded carrot, a handful or two of walnuts and some freshly grated nutmeg, and it was perfect! I did have to bake the loaves for about 10 extra minutes, however. I will definitely make this again!

Apple Turnovers

This recipe is the best, and so simple! I agree with other raters that the apple filling was more than my pastry sheets could handle, but that just meant I got to eat it out of the skillet, which isn't really a problem! :) The pastry sheets puff up so beautifully, it will make anyone look like a pastry chef!! I took another reviewers advice and cut slits in the top of each to give them more of a professional look, and it came out great! I will definitely be making this recipe over and over!

Tomatillo Salsa Verde

This recipe was really great. I'd never made tomatillo salsa before, but this was super easy. I only added 1 cup of water, and I think it was still a bit thin for my taste. Maybe only a 1/2 cup next time. I like a chunky salsa, so I just cooked it for a few minutes more and it was the perfect texture for me--no blending required! Thanks!
