Honey Garlic Vinaigrette

This salad dressing got GREAT reviews! I used a healthy oil blend and reduced the amount a little bit, I used minced garlic from the jar and doubled that amount, and I added a pinch of salt. I made it the night before, and I served it over a salad of mixed greens, sliced grape tomatoes, cucumbers, and sliced almonds.

Grandma Johnson's Scones

These were absolutely delicious - soft, flaky, and tasty! I added about a tbsp each of lemon zest and juice while mixing in the sour cream, and I substituted a cup of dried blueberries for the raisins.

German Spaetzle Dumplings

My husband is a picky German food eater, and he loves this. I use a plastic baggy with holes poked in the bottom (with a meat thermometer) since I dn't have a spaetzle maker. Sauteeing is key to get the right consistency.

Mexican Rice II

Kyle's Favorite Beef Stew

I haven't made beef stew before, but I can't imagine why I'd use any other recipe - this was absolutely delicious. I did the prep the night before I cooked it: I browned the beef and put it in a separate container, then cooked the onions & garlic in the butter and added the wine to that (I didn't use mushrooms), and added the mixture to the beef container. I made the onion soup mixture and placed it in a separate container, and I put the potatoes and carrots in the crockpot - I put all of this in the fridge overnight. I cooked it all on low for about 8 hours.

Chocolate Chunk-Cinnamon Coffee Cake

This is amazingly delicious and moist! To get around using 3 bowls, I mixed the wet ingredients, then added the dry ingredients (no premixing). I use reduced fat sour cream, and it tastes great. I've also made this with blueberries instead of chocolate, and it is just as (if not more) delicious!

Great Green Salad

I made the dressing with yellow mustard since I don't have or particularly like dijon mustard. I also added about a 1/2 to a full teaspoon of honey. I served it over a salad of greens, tomato, cucumber, green bell pepper, avocado, and some grated parmesan cheese.

This was a really great salad, although I used the recipe more for the dressing than the actual salad. I used low fat mayo, and halved the amount of poppy seeds.

Delicious - my husband wants to eat this for every other meal. We cut the amount of sour cream (about 1tbsp), but don't change anything else. Serve with spaetzle!

Strawberry Avocado Salad

I omitted the sugar from the dressing and added a bit of extra honey instead - I think it would have been way too sweet otherwise. I also substituted croutons for the pecans, which are pricey.

Basil and Pesto Hummus

I think this is a good idea in theory, but not the best recipe. I ended up adding extra basil, garlic, and olive oil, plus some lemon juice, parmesan, and pine nuts.
