Well, I just spoke with my daughter and she will be here tomorrow for a conference in DC.  Of course she has her requests...........Chicken Picatta (Mom's).  I've already figured it into my menu plan for the week, so she's happy. 

Last night I fixed a "Birthday Celebration Dinner" for my fiancee' (I guess I should give you his name...It's Darryl)  He and I have birthdays that are only 1 week apart.  So, one meal for two!  Yeah!  We had strip steak and lobster tail, with baked potato and a wilted salad.  Ummmmmmmmmmm Gooood!  I brought some salad for lunch and it was just as good.  I made up my own wilted salad recipe though.  I used baby spinich, iceberg lettuce and romain.  I put in a chopped red onion and some celery (3 stalks).  Fried up some bacon bits and used the remaining grease to create a dressing.  The dressing had 2 tblsp bacon drippings 1/4 cup white wine, 1/4 cup vinegar and 1 tsp of dijon mustard mix it all in the pan that bacon was fried in.  This will deglaze the pan and add extra flavor to the dressing.  Reduce the mixture by 1/3.  Spoon over individual salads.  Add bacon pieces and cherry or grape tomatoes.   Everything else was pretty simple.   It's all in the timing. 

My daughter is excited to not have to cook for the next week and the fact that I'm making he most favorite of meals makes her giddy!  My daughter is my friend as well and that can make for some fun visits.  I look forward to being with her.

About Me
I am 53 the mother of 1 daughter (grown and moved out on her own) and engaged to Darryl. We are avid motorcycle riders and each own Harleys! We have two dogs - Peanut 12 years old a yorkiepoo and our new "baby" is Mac - He is 2 months old and adorable. He is a yorkie. Both have carriers for the bike and goggles, so they ride whenever we do. Take me, take my dogs or I don't go! UPDATE: We got rid of the motorcycles and invested in a new pickup truck and camping trailer! WOW! Now I am trying to come up with meals to fix while we are camping. So much fun!

Holiday Meals - same thing every year. But it really is worth looking forward to. Thanks to my Mom and Dad.
My cooking triumphs
So far I haven't lost anyone to my meals. I guess my biggest joy was the year I made Thanksgiving Dinner for my family and extended family for the first time. My Grandmother, was a home economics teacher and Granddaddy was just a wonderful person. Everyone enjoyed the meal and the best part....It was all done and hot/cold at the same time. Yeah!
