Downeast Maine Pumpkin Bread

Amazing recipe. So flavourful. I reduced sugar to 2 cups, omitted the oil and used 1 cup of applesauce instead. Will be making this again. Toddler approved.

Grandma's Gingersnaps

Even people who didn't like gingersnaps liked these cookies. Recipe Modifications: - I used butter instead of margarine - I added 1/2 tsp of nutmeg Prep Modifications: - I chilled the dough for a few minutes, rolled it about 1/4" thick, then used a cookie cutter. - I cooked for 6-7 minutes They were beautifully crunchy on the outside and chewy on the inside. You do have to watch them to make sure they're not too crunchy :)

Coconut-Curry Lentil Stew Served over Quinoa

My husband loved this (and he hates the idea of eating vegetables and quinoa). I did make a few minor changes to the recipe: 1. I added some chicken stock to the stew 2. I added about a tablespoon of Indian Masala seasoning 3. I used canned tomatoes (simply because I was out of fresh ones) 4. I used chickpeas instead of lentils (because that's all I had) 5. I added about a tsp of sugar to help offset the bitterness of the tomatoes It was wonderfully delicious. I highly recommend you try :)

Hamburger Buns

I made these after searching for egg-free hotdog buns. I followed other website instructions on how to create a hotdog bun - which are much more complicated that a hamburger bun. Anyways, I found they didn't rise well (even after following the instructions). They were more dense than fluffy. It could have been due to the 'hotdog' adaptation.

Vegan Brownies

I was searching for an egg-free brownie recipe and came across this one. The brownies turned out good but I did have to make an adjustment with regards to the oil. I agreed with others that there was just too much oil in this recipe. I actually got rid of the oil altogether and replaced it with 1/4 cup of melted butter and 1/2 cup of applesauce.

Roasted Brussels Sprouts

The last time I had Brussels Sprouts was about 25 years ago. I was little and my Mom told me they tasted like candy. They didn't. Fast forward 25 years later. I'm on an elimination diet and in the 'it's OK to eat me' list is Brussels Sprouts. I decided to try this recipe based on the reviews of others (especially those who thought they hated Brussels Sprouts). The recipe is OK. There was only a faint taste of the sprouts - that's because they were close to incinerated. I took someone else's suggestion and halved them and only roasted them for 30 minutes. They tasted just like the onions that get burned when I do a roast. They tasted over roasted and undistinguishable. Meh - won't make this again. And no, these didn't taste like candy either.

Curried Quinoa Salad with Mango

Wow! I've never had quinoa before, but have just started the Elimination Diet and was looking for recipes using it as a base. This was delicious and will make my diet easy to get through! I would agree with other people's comments that there was too much salt (and I like salt). I would cut the salt in half. I also doubled the pepper (but I like food with a kick). I only used 2 green onions instead of 3. Lastly, I didn't have cranberries (per other people's suggestions) and almonds are not allowed in my diet, so I used sunflower seeds. It was delicious! Thanks for the great recipe!

Janet's Rich Banana Bread

This is a wonderful banana bread! I was a bit worried, having never made a bread with sour cream and only 2 bananas (usually I use 2 cups). I thought it wouldn't have the right amount of banana taste...but on the contrary. It is so moist I preferred it without butter and it has an amazing banana taste. I did make one alteration. Instead of slicing the bananas, I mashed 1 cup (per another rater's suggestion). This is a must-try recipe. I'll be making this again.

Tomato Chicken Parmesan

I rated this recipe 4 stars, but will preface by saying that I made a lot of revisions. I thought it was a great base recipe, but wanted to add some additional flavour. I wanted to share the modifications and therefore had to rate the recipe. Modifications: I added basil, oregano, parsley, salt and garlic pepper to the parmesan/bread crumb mixture. I also put chopped garlic in the beaten eggs. I didn't fry the chicken. Instead I put the chicken in the oven without cheese topping and pasta sauce for 14 minutes to make the breading crispy. I then created my own pasta sauce, put it in a glass baking dish, placed the breaded chicken on top, topped the chicken with cheese and baked an additional 10 minutes. It turned out great and my husband loved it :)

Bread Machine Pumpernickel Bread

Absolutely fantastic! This is a must-bake bread. As a side, I didn't have caraway seeds, so I used cumin seeds instead. Probably a slightly different taste, but it was wonderful. I also substituted whole wheat flour for the all purpose called for in the recipe.

The Best Thai Coconut Soup

Absolutely fantastic! I made with chicken instead of shrimp and mushrooms. I sauteed the chicken on low in the oil, ginger, lemon grass & red curry paste. I then added the other ingredients and cooked on lower heat for longer. The flavours were absorbed by the chicken. My husband almost passed out when he ate it (he thought it was so good)! Next time, I'll add bamboo shoots.

Hard Do Bread

It's Jamaica-approved. My husband loved the bread. Although I will say that it's not the exact same consistency of hard do bread (which is a very dense bread). This one's a bit fluffier. But still great.

Yummy Bok Choy Salad

The dressing is fantastic. I've also been looking for great new ways to eat my veggies. This is a great solution (just wish I could find a way to cut down on the sugar). Highly recommend for families with kids or grown ups who dislike vegetables.

Granola Bars III

My husband liked these very much. A nice sweet and nutty flavour. And super fast to make. I didn't have wheat germ so I substituted with toasted corn germ (I would have used ground flax seeds, but my blender broke). Nice recipe - will make again.

Homemade Flour Tortillas

Baked Asian-Style Honey Chicken

I found this recipe quite nice. I was a little concerned when I heard a few people referring to it as bland - I'm a spice & flavour fanatic but didn't find it bland at all. I added red pepper flakes (which was recommended by others) and salt & pepper to taste. It was a great tasting meal. Will make again.
