Chocolate Mint Cookies I

My first batch at 9:30 cooking time were undercooked; the next batch at about 11:00 minutes cooking time were much better. Andes mints were not available, so I used Hershey's mint chocolate chips (about 5 per cookie) and smeared them in a spiral with a plastic spoon. I used margarine and my cookies were a bit flatter... don't know if that was the reason or not. I stuffed peppermint candy cane ice cream between 2 cookies and made little ice cream sandwiches which were DELICIOUS.

Easy Sugar Cookies

I agree with a lot of the other posters that the cookies were good, but hardened very quickly. I made these and sent them to a soldier overseas, and by the time he got them, they were essentially the quality of hard tack... quite frustrating. The taste was good for the first few days, but after that, they should just be used when dipped in your morning coffee in lieu of a biscotti.

Oatmeal Peanut Butter and Chocolate Chip Cookies

Very delicious. I used 1/2 cup of peanut butter instead of 1/3 cup, and added peanuts (I put them in a bag and slammed them with a metal ladle to crush them a bit) and mixed them in. I scooped closer to a TBSP size dollop for each one, and baked them at 375 degrees for about 11 minutes. The result is a chewy, crunchy, chocolately, peanut-buttery, delicious cookie!

Soft Peanut Butter Cookies

SO much better than the "moist chewy" PBCC recipe on this site. I added an additional 1/4 cup of peanut butter, crushed walnuts, and chocolate chips, and the end result is HEAVEN. This is hands-down THE best peanut butter cookie I've ever tasted. Enjoy!!

Chewy Peanut Butter Chocolate Chip Cookies

I agree with most of the other posters that these cookies were NOT soft and moist but more on the harder/crisper side. Fresh out of the oven they were ok, but for the calories/etc. I would add more peanut butter to get that extra taste. I stored them in an airtight container and they were already hard the next day. Trying another recipe from this site today and seeing if that works better!
