Best Cream Of Broccoli Soup

Excellent soup! I made this for the first time with only a few modifications, including adding a touch of salt and substituting boccolini for broccoli. I also processed the onion and celery first with a food processor, then also processed the broccolini to small bits to speed up the cooking time a bit (though cooking it does take a bit longer than 10 minutes). Using an immersion blender gave it a nice texture with little bits, and certainly avoided the overly processed effects of a blender. I'll definitely make this again!

Turkey Brine

I cooked one of my best turkeys using this brine recipe for Thanksgiving this year. I brined it overnight, used some of the brining solution in the bottom of the pan, and put apricot jam under the skin of my turkey. I roasted breast-side down and flipped the bird two-thirds through the cooking process. My turkey was unstuffed. I used the brine in the bottom of the pan to baste the turkey every 30-45 minutes. Turned out fantastic! To keep things simple, I also roasted potatoes, carrots, pearl onions, and brussel sprouts rather than making the myriad of traditional recipes which my family doesn't care for, and served with a simple salad of greens, grapes, and pommegranites dressed with poppyseed dressing. Cranberry sauce by TJs and gravy made with a roux of butter and flour plus all the defatted and deglazed turkey drippings with a touch of white wine. Followed up with a homemade pumpkin pie. It's been requested for an apple pie in addition to all of this next year! Bon Appetit!

Chocolate Cream Cheese Frosting

I prepared this recipe for layering a cake and prepping it for fondant. It has wonderful flavor, and after a long bit of sitting in between work of many layers and fondant preparations, I added just a bit more condensed milk and mixed again which turned out to be very helpful. The only note I might add is to not get too worried about how dry and hard the frosting is before adding the milk. I used my mixer and started to worry it wasn't going to turn out right when the mixer started to struggle. I might consider alternating between adding milk and powdered sugar to prevent this in the future.

Quick and Easy Chicken Noodle Soup

I made this soup to take to my mother-in-law in the hospital today and only made a few modifications. I first substituted olive oil for the butter and sauted carrots and celery, then removed them from the pan and continued with the onions and garlic. I also revoed these from the pan. I brought the stock (swanson's no salt chicken broth) to a boil and added seasonings (no salt). In the meanwhile, I chopped uncooked chicken tenderloins into small bites. Once boiling, I dropped the chicken into the broth, then added the rice noodles and cooked until tender. When the noodles were cooked through, I added the cooked vegetables back to the pan and added some chopped cilantro. The soup was EXCELLENT!

Ramen Coleslaw

This recipe is SUPER easy and very tasty. I always skip the salt, since the ramen package has plenty already. I also use seasoned rice vinegar since that is usually what I have on hand. If you have any nut allergies, consider using sunflower seeds instead of the almonds. Use purple and green cabbage, add canned mandarins, and anything else you like. Ready in no time!

Taqueria Style Tacos - Carne Asada

OK, this in now one of my family's favorite meals! We are all very fond of the Carne Asada meat recipe! I have made the recipe numerous times using my dutch oven and baking it instead of cooking on the stove top. I use 2 flank steaks and double the recipe for the sauce, then bake for about 1.5 hours. It's super yummy. I have made the roasted vegetable sauce only once and didn't like it as well as others I have made, but the meat is TRULY fantastic!

Mexican Grilled Chicken

OK, this recipe is REALLY easy. The key is picking the right seasonings, and my preference is anything BUT mayonnaise, so I substituted light sour cream. I use McCormick's Taco seasoning which is sold in a large container at Costco. I highly recommend pounding your chicken flat so that you get better penetration of the marinade as well as even and fast cooking. I made extra for my Mexican buffet party, and while I ended up with lots of leftovers, I use them in my enchilada recipe to make an additional meal or two in advance and put them in the freezer. Yum!

Mexican Rice II

So, I made this for the first time while hosting a party. Using a long grain brown rice, I scaled the recipe 3-fold and substituted McCormick's Taco seasoning which I buy in a large container from Costco. I also used a can of tomato paste since I didn't have tomato sauce and adjusted with some water. I also made it ahead in my dutch oven, then reheated about 1/2 hour before serving, again checking that there was enough moisture in the pot so it wouldn't dry out. Everything else, I followed the same, and it turned out great! The fact that my 11 and 8 year olds liked it was an additional benefit. I will definitely make this recipe again!
