Banana Stuffed French Toast

Italian Wedding Cookies III

Just made these to pack for Christmas presents. Followed others recommendation: unsalted butter, 1/4 tsp salt, used the ice cream scooper method then rounded them with my hands, then squeezed the balls so that they are slightly taller because they flatten out a little after baking. I was able to get total 60 cooikes with this recipe. Great recipe - thanks for sharing.

Sweet Restaurant Slaw

I Used 2 tablespoon of wine vinegar instead, and redced oil to 2 tablespoon. This was great accompaniment to the texas slow cooker pork. Also used a small head of cabbbage(shredded) and a large shredded carrot instead of the bagged coleslaw mix.

Baked Meatball Sandwiches

This recipe always turns out great. I have tried the exact recipe. I have also tried using dried parsley instead of fresh ( reduced to 1 tablespoon), also used leftover ground wheat bread as breadcrumbs. This was great with spaghetti.

Mediterranean Salmon

Easy and delicious! I reduced the oil and balsamic in half. I used salmon filets about quarter inch thick, and i brolied on one side only for about 3-4 minutes. I paired with naan bread and roasted squash with yogurt sauce (see recipes on my profile)

Carrot Cupcakes with White Chocolate Cream Cheese Icing

Ahh! Finally - perfect carrot cupcake recipe. I did not have walnuts, so I used pecans instead-chopped to the size of mini chocolate chips. Also, I squeezed out as the juice from the crushed pineapple. Thanks for sharing.

Slow Cooker Texas Pulled Pork

Tried this again, used the exact measurements as stated in the recipes, except i used non stick spray instead of the oil, then added half of the copped onion on the bottom of the slow cooker, place pork on top of onions, pour on top of the roast: broth, vinegar, worchestshire,bbq sauce, mustard. Sprinkle on top of roast chili powder,thyme, and the remaining onion. Roasted for 6 hours on high. Great on Naan bread and restaurant style coleslaw.

Bacon Spinach Quinoa

Tried fixing quinoa for the first time. This recipe is really easy. I reduced the bacon to only 1/4 cup then added 1/4 c. mirin or white wine. Salt and pepper to taste. I skipped the cilantro. Will be fixing this again. thanks for sharing.

I have used this recipe many times. Very forgiving. I used cold butter instead of shortening. I have also used milk or buttermilk, either one works fine. Just pour the liquid a little at a time until the right consistency is reached. Brush the top with milk before baking.

Paella III

To save on cooking time in the oven and make sure rice gets cooked through, i cooked the basmati rice in a rice cooker first. I added about 1 cup of the broth to the rice mixture. I also used 1 can stewed tomatoes. Used italian sausage instead of chroizo. I also soaked the saffron in 1tsp of warm water before adding. Put all mixture in a large baking dish, and bake at 400 degrees for 30 minutes. I did not have peas or clams, but i added a cup of stir fried snap peas and put them on top of the Paella before serving. Will try his reciep again, and add 1/2 tsp turmeric, 1/2 tsp paprika

Pork Tenderloin

This is a really good recipe. I did have sherry so I substituted Marsala wine. Also, since I did not read the comments until I was in the middle of roasting. I started the oven at 325 degrees after an hour, it was still too pink in the middle, then I saw another readers comments, and increased the temperature to 425 degrees and roasted for another 10 minutes. Family loved it. Served with roasted potatoes, steamed asparagus and broccoli.

Indian Tandoori Chicken

I just made this recipe for my family and it was a hit, even for my teenage kid who does not like anything spicy. I reduced the cayenne pepper to only 1/2 teaspoons. I also used greek yogurt. Broiled it in the oven, with door slightly open, at about 15 minutes each side. Served this with rice and cucumber raita.

Pupusas de Queso (Cheese-Stuffed Tortillas)

This turned out too dry and bland for me. Next time I i will try making with a little more water, maybe add salt, cilantro, jalapeno for a filling.
