For those of you having texture problems, take into account where you live and your elevation above sea level. Also, in certain parts of the USA (California mainly) there are unique yeasts in the air that will be incorporated into your dough - if you leave the dough in the fridge for a few hours, this can cause your cookies to 'rise' (even if you can't see it there may be many tiny air bubbles in your dough) and give that cake-y texture. If you have problems like this frequently make sure you don't over-mix your dough and buy a locally-made cook book with tried and true recipes from your particular area. Hope this helps :)
