Blueberry Smoothie

This was an excellent smoothie. I substituted vanilla yogurt so I eliminated the vanilla extract and also left out the nutmeg. I will definitely make this again.

Double Chocolate Cherry Muffins

I am not a huge muffin fan but this recipe sounded really good so I gave it a try. They were excellent, very moist and had great flavor. I did use vanilla extract as I was out of the almond and I also had no mini chocolate chips so I used regular chocolate chips. Next time I will definitely use the mini as the distribution in the batter would be more even. I did mix the dry ingredients separately and the wet separately along w/cherries and then combined them and mixed just till blended. I used regular size and mini muffin tins instead of the jumbo. They are super tasting and freeze very well. I will definitely make them again.

Grilled Sausage with Potatoes and Green Beans

I needed to use up some fresh green beans, saw this recipe and fortunately had the smoked sausage in the fridge. I had to get it thrown together in about 5 minutes so I cut up the sausage, threw in a good handful of cut beans and cut up some potatoes (cut to same size as sausage). Threw all of it together along with the onion in a 9x13 pan, topped with seasonings, oil, butter and water and sealed with foil and popped it in the oven at 425 for about 30-45 minutes or till veggies were tender. It was great! The seasonings gave a lot of flavor...some might consider it a bit salty and peppery at 1 t. each but it all worked together flavorwise really well. Will probably try it on the grill sometime but the oven method worked great and it was so easy to throw everything in a pan, cover and bake. Very tasty recipe!

Breakfast Cookies

I was really hesitant to make these with the bacon in them but I was plesantly surprised. I did not have corn flakes so substituted 2 cups of Great Grains Raisins Dates & Pecans Cereal and eliminated the 1/2 cup raisins from the original recipe. I haven't gotten reviews from the family but anticipate they will like them. They will make a great quick breakfast along with coffee/milk or juice. Good cookie!

Rhubarb Stir Cake

This cake was very good. The nutmeg was a nice change from the usual cinnamon topping. I do think it tastes best with some whipped cream or ice cream on top.

Broccoli, Rice, Cheese, and Chicken Casserole

This recipe is a keeper, very good. I made a few minor changes based on getting rid of some leftovers in the fridge. I used 2 c cooked chicken instead of cans of chicken. I also used 2 c. shredded cheddar instead of processed cheese and threw in 1/2 c sour cream. I think next time I will add some buttered bread crumbs on top and a little salt and pepper.

Poached Orange Pears

Sooo good! I'm not a pear fan but now have a good reason to buy them. I made the recipe exactly as directed and it tasted great. I then decided to experiment and take some soft honey nut cream cheese, warm slightly in the microwave and add a tad of maple syrup to thin and then drizzled on top of the whole thing. Great recipe, will definitely make again.

Roasted Carrot Salad

This salad was delicious, a great combination of flavors. I hate substituting on a new recipe but our store did not carry arugula so I substituted spinach and I had feta cheese that I needed to use up so substituted that also. The salad was a winner and I will definitely make this again.
