Homemade Chicken Cacciatore, Sicilian-Style

Wow this was amazing! My whole family loved it. I made this in the pressure cooker which infused the flavors and also speed it up enough that I could cook it last minute after work. I tweaked the recipe just a little, like I didn't have any peppers but it was SO good without I won't put them in ever. I used 1 can of regular diced tomatoes & 1 can roasted diced tomatoes because that is what I had on hand. I didn't brown the chicken, and I took the skin off all the pieces except 3 for flavor. (then removed it with the bones) I added beef broth for the extra liquid to pressure cook. I also cooked up 3 slices of bacon, crumbled and added this plus 1 tbsp of the drippings to the recipe. I used egg noodles because again that is all I had. I didn't use any flour, I just added a can of tomato paste at the end. This is an amazing recipe and my family always asks me when I am going to make it again!

These were ok, I made them exactly as written but then didn't turn out fudgy more cake like and a little dry. Wouldn't make them again.

Pumpkin Pancakes

Fantastic!! Love these!! Have made them twice for my family....tweaked the recipe just a little; I use the whole 15oz can of pumpkin, and I use pumpkin pie spice + some extra cinnamon (we love cinnamon) 2 eggs and I throw in a half cup of instant oats. (Everything else the same) With maple syrup on top it is heaven!

Cheesecake Dreams

These are really good!! I did tweak the recipe a little, first I doubled the recipe and made this in a 13 X 9. Also I added an extra package of cream cheese. (I used reduced fat) Instead of pecans I used sliced almonds and coconut, which I toasted together in the oven. Added a great flavor..YUM! I kept 1 cup aside for the topping. (Much better the crust/topping is amazing good) Upped the vanilla to 1 tbsp. And I cooked it for 40 mins. My only problem is these are very crumbly, not sure if more butter would have helped keep everything together.

Cheesy Ranch Potato Bake

So good!! I have made this numerous times and it is always a winner!! Even took this to a outdoor picnic wedding reception and everyone couldn't get enough!!! Only change is using 2 tbsp of butter and 1/2 lb crumbled cooked bacon. Thank you for this recipe!!

Brown Sugar Meatloaf

This was soooo good!! Only changes I made were to put 1 tbsp dijon mustard, a dash of worcestershire and balsamic vinegar in the glaze. (Didn't put the stuff on the bottom, but on the top) Also used bread crumbs instead of saltines. Threw in 1/2 cup of greek yogurt to the meat mixture and it was soooo moist!!! A WINNER!!

Lentils and Rice with Fried Onions (Mujadarrah)

This was so good! As per some of the reviews I changed some things. I used chicken broth instead of water for the lentils and rice. I didn't have any cumin so I added some curry instead....YUM!! Also added the cinnamon to the frying onions. Those few tips really took it to a wonderful level. Topped with some greek yogurt. My whole family loved this!! Thanks!
