Italian-Style Quinoa-Stuffed Sole
I made this with modifications (of course, I cant help myself!) I jazzed up the quinoa by cooking in vegetable broth and adding some italian seasoning, mushrooms and asparagus because I had them and needed to use them up. Balsamic vinegar instead of red wine. Didnt have fresh lemon to put on top and think it would have made it even better. My husband (who I don't think was expecting much, by the way!) said it was really good and maybe we should add some lemon pepper to the top before baking and I will try that next time. This is probably a 3 star before modifications, and a 5 after, so am rating a 4.

Quinoa Vegetable Soup
I am eating this as I review...yummy! I had some leftover cooked quinoa to use up and this recipe was perfect for that. I followed some other reviewers. I added some chicken, mushrooms, Italian Seasoning, red pepper flakes and cumin as suggested by other users and subbed yellow pepper for green and a can of italian diced tomatoes (juice and all) because that was what I had on hand. Also added some frozen mixed veggies. This is so, so good and I am thinking that even my picky teenager and quinoa skeptic husband will eat this up! Would give 5 stars but am not rating the original recipe.

Simple Whole Roasted Chicken
This was amazing! I doubled the spices as suggested by other users and rubbed it under the skin. Otherwise followed recipe exactly and it was so good. Even my basic-food-liking father in law liked it and I had been concerned that he might think cinnamon on chicken was strange. Mom-in-law even asked me for the recipe, Put sweet potatoes, potatoes, carrots, onion and turnips and a little water under and around the rack in the roasting pan and the drippings gave them an amazing flavor. Also made the Chimichurri Sauce as recommended and it was deelish! and The cooking time was right on for my 4 lb chicken. Leftovers made a great chicken salad with grapes and apple. 14 year old loved the chicken, 7 month old loved the veggies, an out and out hit! Will absolutely make again, with no changes.
