Chickpea Curry

I love the complexity of the flavors in this recipe! It's easy to prepare and tastes super authentic. As per some other reviews I left the liquid from the beans out and simply pureed some of the chickpeas. Serving it up with a dollop of plain yogurt was a hit with the vegetarian colleagues that I made it for and controlled the spice levels for those who's tastes preferred a milder option. Thank you for this recipe! :)

Baingan Bharta (Eggplant Curry)

This was a simple enough recipe and I enjoy the flavors (especially the next day once they've had a chance to fuse). I may have overcooked the eggplant however, because I found the dish a bit lacking in texture. Making sure you don't overcook the eggplant is key for this recipe.

To Die For Blueberry Muffins

I loved this recipe! It was so simple and the topping made the muffins taste like coffee cake. Subbing white sugar for brown worked out really well! Thank you!
