Kerry's Beany Salad

I have made this several times and enjoy it every time. I have also made it for gatherings and have had recipe requests each time. I read the previous reviews before preparing it the first time and so made some modifications - double the vinegar, garlic and pepper flakes and cut the oil in half. I use brown rice or white/brown rice mixed. I cook the grains together and add some boullion to the water. And I use italian parsley instead of cilantro (not a fan of cilantro). Thanks for submitting the recipe!

High Flavor Bran Bread

I love this bread. I have a thick slice of it for breakfast every day. I have made it a bunch. All my houseguests have enjoyed it as well. I make a couple of changes - use half wheat and half white flour (1 3/4 c each), 1 3/4 c water, 3 tbs oil and 3 tsp yeast. I also add 3 tbs gluten as I don't have bread flour, just all purpose.

Absolute Mexican Cornbread

Really good with using the other reviewers suggestions - less butter, less sugar. Made a half-recipe for dinner last night and it didn't last! I found that cooking the half-recipe in 8x8 pan took only about 35 minutes on 300 degrees (convection).

Tortillas II

I just made these for lunch and they were very good. I took other reviewers suggestions and added more shortening (somewhere between 1/4 and 1/3 cup total) and boiling water (close to 3/4 cup). I used half whole wheat and half all purpose flour. Next time I'll use less whole wheat. We really liked them. I never thought I would make tortillas, but these were easy to do. If I had more time I would have kneaded the dough longer and let it rest longer - next time. Thanks for the recipe.

Candy Coated Pecans

We've used this recipe a lot, with pecans, almonds, or walnuts. We all prefer the pecans, but the other nuts are a nice change sometimes. I usually add some cinnamon and nutmeg. I also usually toast the nuts slightly and let cool before coating and baking. After baking I also let them "dry out" in the oven a while with the oven turned off. Thanks for the recipe.

Easy Roasted Red Pepper Hummus

Really good! Doubled it just to use up a full jar of roasted red peppers. So glad I did! I did reduce the lemon juice as some suggested and I sauteed the minced garlic in a little olive oil to mellow it.

Very good. Easy too, just get in on the stove and let it cook. We used a whole onion/green pepper, and omitted the water. Also added salt/pepper to taste at the end. (Had a 1/2 can of mild chiles in the frig, and wanted to use that up too, so I tossed them in there.)

Chocolate Revel Bars

Very good. Made them for husband to take to work. Even leaving out some ingredients because of the "assistance" of my 2 1/2 year old. They were still so yummy. My husband's coworkers raved about them. Thank you for the recipe.

Easy Ice Cream Cake

Very good, very easy! So quick to assemble. Made this yesterday and stuck it in the freezer for an Easter lunch dessert for today. It was a hit. Used 2 whole pkgs of ice cream sandwiches to fill a 9 x 12 pan twice. Had to eat half a sandwich for each layer - otherwise used them all up. Also chopped up a Butterfinger bar to sprinkle on each layer of whipped cream (2 bars, one for each layer). The Butterfingers were my daughter's request. Tasty! Thanks for the recipe.

Irresistible Irish Soda Bread

Very good. Served with "Guinness Corned Beef," "Fabulous Fried Cabbage" (both from this site), and some roasted root veggies. I made the bread the night before and let it sit overnight (wrapped in foil). I did have trouble with it spilling out of the loaf pan as it started to cook, so I quickly put a cookie sheet on the rack below to catch any more spills. The top wasn't neat looking, but I served it sliced on a plate and nobody knew the difference! Thanks!

Asian Beef Skewers

Just made this again last night and always love it! We have used this same marinade on chicken and beef. I found I didn't like having pieces of minced ginger on the meat, so went to using ground ginger instead. Tasty, tasty, tasty. Thank you.

Sweet Dinner Rolls

Very good. Made for Christmas dinner yesterday. I used the traditional method as I don't have a bread machine anymore - it died. I have made this recipe in the past using the bread machine. Both ways yield great results. My 8 wedge-cut rolls turned out large - next time I may cut more wedges out of the circle. Also the leftover "crescents" cut in half lightly toasted with butter and cinnamon sugar are so tasty! My daughter and I enjoyed some of the leftover rolls like that today for a snack.

Beefy Chinese Dumplings

Yum! I halved the beef, cabbage, carrot and onion, but kept the rest of the ingredients the same (accidentally). Turned out with a good amount of seasoning (but maybe a bit too much oil - my fault since I was supposed to half it). I should have made the whole batch, there were no leftovers except two measly dumplings for lunch the next day!! I tried to pan fry a few right after boiling, but that didn't work so well. I'll probably need to boil ahead, chill, and then pan fry before serving. I served them with "Oriental Dipping Sauce" and "Quick Chinese Style Vermicelli," both from this site, on the side. I also added a few drops of hot sauce to spicen up the filling, may do more next time. Thanks for the recipe!

Guinness® Corned Beef

Very good. I put it in the slow cooker for a long slow cook and it was delicious! I had both a tip cut and a flat cut in there and they were both great. Served it with "Irresistable Irish Soda Bread," "Fabulous Fried Cabbage" (both from this site), and roasted root veggies. Thanks!

Taco Seasoning I

Bermuda Spinach Salad

Very good. Needed a last minute dressing for a bag of baby spinach I had and this was perfect. Used less sugar, as some others suggested, and balsamic vinegar (because we were out of cider vinegar). Tasted wonderful. Thanks.

I really like this. Just made it (doubled the recipe), family hasn't tried it yet. Used chicken broth, half the allspice. I figure we can adjust our seasonings at the table. From what I tasted already, yummy!
