Favorite Corn Bread

This was so good!! I've never made cornbread from scratch until now. I've always used the blue box kind; didn't have one on hand to go with my New Year's blackeyed peas. I've had corn meal sealed in a Food Saver bag for eons, so I thought I'd give this a shot. I'm so glad I did too! I didn't have shortning so I replaced it with an off brand veg. oil. I also mixed 1/2 c. skim milk w/half and half (had to save the rest of my half & half for tomorrow morn. coffee :D ) because I didn't have whole milk which I try to use when making a new recipe. The next time I'll try full skim milk to see what difference it makes. Per another review I soaked the corn meal for approx. 10 min. Anyway, this turned out moist and sweet, just wonderful. When I pulled it out of the oven after 20 min. the center was a bit taller then the edges and I thought 'uh oh", thinking the edges would be dry~it wasn't Don't know why it came out that way, possibly because my baking soda is at least a yr. old? Whatever. Like I said this was really good~try it!

Pumpkin Pancakes

Made recipe as stated. These were very gooood and very filling. Hits the spot on this cold snowy day! I had baked a pumpkin at Thanksgiving for pumpkin pie and had pulp left over, so I froze it for later use. I defrosted it last night. This worked out very well.

Grilled Pork Tenderloin

This wasn't too bad. My coals were burning out and it was getting late so I finished it off in the oven. Very moist, but too peppery for me; and I'm a big fan of pepper too! If I try this again I'll definately cut back on it. I would give this a 3.5, but I don't know how to give a half star. My first time to post.

Honey Cornbread

Very Good cornbread. Baked on spur of the moment, I didn't have cream on hand so I used half & half. I decided to bake in my cast iron skillet, never have done that b4-I've always made muffins in the past. I will make this again.

Hearty Split Pea Soup

Very yummy! I followed the recipe. I liked the flavor a bit more before I added the milk, the milk mellowed out the depth of flavor a little to much for my taste. As is I'd score this more like a 3.5.

Pork Chop and Cabbage Casserole

This was pretty good. I seasoned the 1/2 inch thick pork chops w/a little garlic salt/onion powder before browning them. I was concerned about the chops drying out per other reviews so I covered the casserole dish w/foil after 45 min. or so of baking. The cabbage tended to be cooked to the texture of boiled cabbage; I may have perfered a little towards al dente'. Also per reviews I sliced the potatoes fairly thin; wished I had gone thicker. My 9x13 accommodated layers of: cabbage, potatoe, cabbage, potatoe, cabbage then chops, and I forgot to salt the layers until the last layer of cabbage, so I salted it good then. I don't think it mattered that much. The chops were fork tender. Overall, good winter comfort food.

Scrumptious Salisbury Steak in Mushroom Gravy

I rate this 3.5 stars. It was pretty good, but I won't make it often. Good comfort food if you ask me. The gravy took a long time to thicken (it did thicken nicely) even at medium heat. I almost added more flour but glad I didn't; I think it would have tasted too much like flour if I did. I didn't get 6 1-inch patties out of the beef, only 5 3.5 to 4 inch patties which was ok with me. Oh, I used fresh mushroom and sauted them until they started to darken just a *little* bit before adding the flour which worked out in the end since the gravy took so long to thicken. I think if I had sauted them longer to make them can style soft if you will, they would've been over cooked. I also added some sliced onion (sauted with sh'rooms)because I like the combo and I had an opened one in the fridge that needed to be used. I also think this gravy would be a good base for stroganoff too.

Pear Honey Cranberry Sauce

I was excited to try this different twist to cranberry sauce especially with ingredients I know I like, but all-in-all I didn't really care for it. The taste of honey really overpowered the other ingredients. I'm not a picky eater either. I used fresh cranberries, Kroger's brand of honey, and the pears were tasty by themselves, so maybe the store brand of honey was my mistake, who knows.... Most likely won't make again...
