Azalina's Mint Curry

This recipe has been a bigger adventure than I anticipated. As I type my hands are covered in yellow as if a highlighter exploded all over them from cutting up tumeric root. I had never done that before. Nor had I toasted anise or cinnamon or even seen cardamom pods. Which is why I love this recipe. One thing that confused me was the toasted coconut. I realized mine was sweetened, so I went back to the store where my only other option was a whole coconut. My boyfriend had to hatchet it open for me, and I'm sure there's a better way to shred and toast it than what I did. It looked a bit like an episode of Lucy. I had a tough time getting the curry paste to become a paste. My blender's motor was struggling, so I ended up adding almost a cup of water. Plus is ended up a little gritty, so make sure to blend better than I did. But overall this was a fun thing to do on a Sunday afternoon. I delivered some to friends and they raved about it. I'm so glad I tried it! Thanks Azalina!

Grilled Salmon I

First taste and I said: "Oh yeah momma!" It was so good. I didn't even have all the time to marinate it, and I did it in the oven for 20 minutes, rice on the side. Also, I took the extra marinade, added some flour (pre-whisked into water) and heated it for a sauce. Yum!

Moroccan-Style Stuffed Acorn Squash

I used carnival squash because I haven't loved acorn in the past. It took an hour to roast but this dinner was worth it. It looked so beautiful and was really filling. I didn't love the celery. It could go without it. I might try some toasted pine nuts next time. There will definitely be a next time.

Addictive Sweet Potato Burritos

The first time my boyfriend and I had these we thought they were just ok, then we realize that they get way better a day or two later as leftovers. I made some tonight to keep in the fridge for tomorrow, when I plan to wrap them all up and freeze for easy to-go meals. Definite keeper!

Homemade Black Bean Veggie Burgers

These are yummy indeed. I used two eggs and had no problem with the sticking together. For lunch the next day I mashed up two leftover patties and fried them up in a little oil to put them on a flour tortilla as a burrito. That was delicious.

Lentil Soup

I made this on a sick day with the leftover liquid from a collard greens experiment and chicken stock. Really good! I liked it with the balsamic vinegar and parmesan cheese. Worked well as a meal with biscuits on the side. I'll be freezing lots of leftovers too!

Grilled Chicken with Herbs

Great basic chicken recipe. Ate it with some kabocha and orzo. My only complaint was that my chicken stuck to the grill, so I guess the oil you marinate it in isn't enough to keep it from sticking. I'll add it on the grill next time.
