Vegan Pancakes

I replaced the water with milk and oil with butter (ran out of eggs and already had the milk and butter in the bowl). Cooked them on low. Still turned out fluffy and tasty.

Salsa Chicken

I think it all depends on your salsa. This recipe turned out well for me. I didn't have taco seasoning, so powdered the pan with some cumin, chili powder, salt and onion powder, and threw down a little oil before I put the chicken breasts in. No problems there.

Mexican Bean and Rice Salad

Not disappointed. I lacked kidney beans and lime juice, left out jalapenos completely, but added fresh ground pepper and some chili powder. Lime juice would definitely have gave it more oomph and rounded out the flavor, but it still turned out tasty! Perhaps reviewers who call this recipe bland don't usually eat or like the taste of fresh vegetables...

Cinnamon Rolls II

These turned out delicious! Here are my deviations from the recipe: First of all, I made 1/4 of the recipe (6 rolls). Second, when using Active Dry Yeast, sometimes you need to ACTIVATE it-- my 50-cent package came with directions on the back--basically take some water (deduct it from the recipe total), add some sugar for the yeast to eat, add the yeast, let it sit for 5 minutes or so, and THEN dump it in and continue with the recipe. This ensures the yeast is active. Third, I ended up using more than the apportioned amount of flour, simply because I don't know how to knead dough and kept adding some to keep it from sticking to me. Fourth, I let the rolls rise in my oven (heated to 170 and then turned off) since my house is about 60 this time of year (so consider the temperature as a factor in rising time). This took about 3-4 hours. They came out with good texture and the icing was very nom too!

Refried Beans Without the Refry

I added everything (except jalapeƱos) AFTER the beans were drained. The amount of salt is too much for this method, but overall delicious. I finely chopped the onions. My many guests loved it. This is the bean recipe for me. A little Turmeric adds a nice flavor too.

Elegant Pork Loin Roast

Fudge

Followed directions to the T, even used nice chocolate. It has been in the fridge for about 5 hours now and I would assume is set by now. This fudge is gummy and and tacky--tastes too much like chewy melted chocolate chips. I think adding peanut butter (as suggested in other comments) would have improved the taste and texture very much, perhaps replace part of the sweetened condensed milk. Fudge fail.

These are absolutely delicious burgers. While they are browning, I cook dehydrated shiitakes and fresh onions in Worcestershire sauce and serve them on top the patties. Super nom!
