Quick Sauerkraut Russian-Style

This was my first time at homemade sauerkraut, and loved how it turned out. I followed the recipe pretty much as written except did not have a carrot. Also, I used my food processor to do a rough chop on the cabbage. I bought a 2 gal crock for it which worked well for one head of cabbage, a one gal. would probably work. Quick, easy, and healthy, it stayed nicely in the fridge in a large lock and lock container. I am making another batch today. Loved it.

Slow Cooker Spicy Black-Eyed Peas

This one of my "go to" recipes especially in the winter. It is flavorful and spicy. I make it vegetarian by leaving out the ham and bacon and using a veggie bullion cube. It is so good. I like it with homemade crusty bread or corn bread or just by itself. I make it often. No need to pre-soak the black eyed peas. I also make them on top of the stove, simmer for about an hour or until tender. They are even better the next day if they last that long.

Cottage Cheese Roast

I tried this and have fallen in love with it. You have to try it if you like a "meat loaf" kind of mid west, diner, comfort food. I baked it for 60 min. in a loaf pan, recipe as written. It would be great with green beans, gravy, roll, and apple pie.

Mock Tuna Salad

I love this recipe. It can be eaten in a sandwich, on crackers, stuffed in celery, or straight up. So good and good for you. It tastes like a tuna or egg salad sandwich in a good way.

Chole Saag

I thought it was wonderful. The spice got my attention, sweetness from the peas, healthy, and low fat. Now, I did use what I have on hand, so frozen peas and beans, and used 6 cloves of garlic. I did increase the temp to medium high to cook the onion, garlic, and spices until soft. Also, added plain greek yogurt on top after served in a bowl. Very good and highly recommend.

Vegan Black Bean Soup

This is a tasty hearty soup without the calories, makes a lot, and freezes well. The recipe says to saute the onion, celery, carrots and garlic for 5 minutes and then cook for 15 min. My chopped carrots needed more time to cook. Next time I will chop all the vegetables smaller to cook in this time frame. I also had to add quite a bit of pepper. Thanks for the recipe.

Ethiopian Cabbage Dish

I like spice and basically used 1tsp. of all the spices. I also cooked using 1/4 cup of olive oil. That is just for my preference. The dish is wonderful. The cabbage cooked down with the potatoes staying in nicely intact cubes. It is healthy and delicious!!!
