My favorite things to cook
I really like improv cooking. Right now I like to cook dried back beans, black eyed peas, lima beans, lentils, garbanzo beans, and pinto beans and make yummy stuff.

Quick Sauerkraut Russian-Style
This was my first time at homemade sauerkraut, and loved how it turned out. I followed the recipe pretty much as written except did not have a carrot. Also, I used my food processor to do a rough chop on the cabbage. I bought a 2 gal crock for it which worked well for one head of cabbage, a one gal. would probably work. Quick, easy, and healthy, it stayed nicely in the fridge in a large lock and lock container. I am making another batch today. Loved it.

Slow Cooker Spicy Black-Eyed Peas
This one of my "go to" recipes especially in the winter. It is flavorful and spicy. I make it vegetarian by leaving out the ham and bacon and using a veggie bullion cube. It is so good. I like it with homemade crusty bread or corn bread or just by itself. I make it often. No need to pre-soak the black eyed peas. I also make them on top of the stove, simmer for about an hour or until tender. They are even better the next day if they last that long.

Cottage Cheese Roast
I tried this and have fallen in love with it. You have to try it if you like a "meat loaf" kind of mid west, diner, comfort food. I baked it for 60 min. in a loaf pan, recipe as written. It would be great with green beans, gravy, roll, and apple pie.
