Donut Muffins

Reviewed: Feb. 7, 2011
OMG!!!! What is wrong with me???? I made this recipe and cut the nutmeg back like everyone said and put a little cinnamon in the dough. I used butter instead of margarine like someone suggested. I was able to divide the dough between 24 mini muffins (Yay me!). The dough tasted yummy by the way! I baked for 10 minutes while I was sitting here reading other recipes, reviews, etc. I was smelling this wonderful aroma and getting all cocky--I was thinking I should get on Amazon and order my son some mini muffin pans because he loves cinnamon sugared food and doesn't mind cooking. Then the timer went off and I looked in the oven...... Some of my muffins looked kind of rugged and sort of raised and some were just totally over running the cups and flat flat flat! I let them cook a few more minutes before taking them out of the oven. Guess what!? they were so stuck to the pans even though I had sprayed each cop with Pam. 24 mini muffins turned into 17 muffins. I guess I ate the other 7 crumb by stuck crumb! These are so good but I need to work at making mine look like the pictures.

Cream Cheese Squares

Reviewed: Jan. 18, 2011
The end result was not what I expected at all. I had an image of flaky thin layers of dough with gooey cheesy filling. The crescents were so dense and seemed to overpower the filling. My husband bought the rolls--are there more than one size can? Next time I will try the frozen puff pastry to get the thin flaky layers I am looking for.

Brownie Tarts

Reviewed: Jan. 18, 2011
Everyone at the party loved these! I made half with pecans and half plain. I was able to make exactly 24 because that's how I divided the dough up. 1/2 to 3/4 full of filling is plenty. I piped heavy whipped cream on top of the cool tarts and dried the cherries with paper towels before putting them on top. Rave reviews! Thank you for the recipe!!!

Mexican Corn

Best corn recipe I have tried! It is perfect as written. Not too spicy if using jarred jalapenos.

Cinnamon Rolls III

Reviewed: Dec. 19, 2010
So soft and sweet! I added raisins and omitted the nuts. I do not have a bread maker but used my dough hooks on my mixer to mix the dough. Also, I did not have bread flour so I added 2 tsp of baking powder. If I make these again I may cut down on the brown sugar because the icing is so sweet and rich.

Spicy Garlic Lime Chicken

Reviewed: Dec. 18, 2010
I have to review this recipe because it was so good! My meat was so tender and spicy. My husband loved it which is very unusual since he is so picky. Like every recipe and every other cook, I did make changes. Instead of chicken I used thin boneless pork chops. We like spicy so I used Tony Cacheres instead of regular salt. If you like lime and spicy--try this recipe!

Chad's Slow Cooker Taco Soup

Reviewed: Nov. 26, 2010
Chad! This is good stuff!!! I made it today on one of our first cold days in southern Texas. I put everything in the crockpot except for green, red, and jalapeno peppers. I used a smoked beef sausage link cut up instead of the pork sausage and a Corona instead of the dark beer. I was so worried about the beer taste that I used only about 2/3 of a bottle and added about a cup of water. Well, it has been cooking for 5 hours and I have had two bowls already. It's very filling and the layers of flavor are amazing and come through in every bite. This is a true TexMex style dish. Thanks for sharing!

Pizza Dough I

Reviewed: Nov. 23, 2010
This is so quick and easy! I proof the yeast with the water, sugar, and oil first. I add garlic powder, onion powder, and italian seasoning mix to the flour. This is my second time to make this recipe and will keep forever!

Sugar Cookies

Reviewed: Oct. 25, 2010
These taste good--not too sweet. I wish they stayed puffy like when they come out of the oven, but sadly they ended up deflating and got wrinkled. They still look and taste great though.

Banana Oat Muffins

Reviewed: Sep. 25, 2010
Very good taste and texture. I added walnuts to half of the muffins. They all cooked in sprayed cupcake papers (bottom only) and did not stick. I wonder if carrots and raisins could be added instead of bananas just to change it up?

Loved loved loved it!!! As many posters have said, my husband does not care for fresh fish but he was amazed that he liked this fish so well. Thank you for sharing this recipe--it is definitely a keeper.
