Tiramisu Toffee Dessert

I used mascarpone instead of cream cheese and sprinkled the top with cocoa instead of mixing in chocolate syrup. Also added a couple of tablespoons kahlua to the coffee. The one thing I would change is slicing the cake into thinner slices and doing 2 layers. The coffee only soaked the very top of the cake slices so the bottom of the slices seemed a little dry.

Chewy Chocolate Chip Oatmeal Cookies

I made the recipe as written and it either needs more flour or needs to chill before baking because these spread way too much. The recipe says to use an ungreased cookie sheet. These stuck terribly. And one cup of chocolate chips was not enough.

Quinoa Black Bean Burgers

I have been trying to sneak some healthier vegetarian recipes in for dinner for my kids so I tried this. I cooked the quinoa in broth instead of water. The flavor was actually really good but the texture was too soft- maybe some adjustments to the recipe to make the batter/dough a little less soft would help. Mel's Kitchen Cafe blog has a recipe for quinoa patties that I make frequently that have a better texture if you are looking for a veggie burger recipe that is a little sturdier.

Best Lemonade Ever

I used this recipe to make homemade lemonade for the first time this summer and now my family won't drink store bought lemonade! I actually use a little extra sugar, about 2 cups, and add most of the sugar/water mixture to the lemonade, then taste it and decide whether or not to add the rest. I think some lemons must be more tart then others because some batches need more sugar than others. A tip if you are squeezing the lemons by hand: let the lemons come to room temperature and roll them on the counter to soften them up before squeezing.

Pretty in Pink Sangria

I used pink moscato wine and used fresh blueberries and strawberries after reading reviews that the frozen strawberries got too soggy. I served it at a birthday party and everyone loved it. I don't usually like wine and I enjoyed this.
