Eggplant Parmesan II

This is an awesome version of Eggplant Parmesan!! My Italian husband says it is the best he has ever had. It honestly makes no difference in taste that the eggplant is baked rather than fried. I made a half-size recipe and it worked well. I did salt and press the eggplant and I did bake them about twice as long as suggested. Awesome, awesome!!

Easy Chicken Cutlets with Apples

I tried this recipe with pork instead of chicken - my husband loves apples with pork. I used thick pork loin chops and sliced them to about 1/3" thickness. Other than that I followed the recipe as written, except that I did add some cornstarch to the sauce to thicken. Next time I will not add the salt to the breading mixture. We liked this very much! Thanks!

Chicken Marsala

This Chicken Marsala is very good as well as simple. I made it exactly as the recipe directed. The Marsala flavor is delicate and I cannot imagine covering it up with garlic and onions as described in some of the other reviews. Thanks!

Chicken Enchiladas with Creamy Green Chile Sauce

We really liked this recipe! I cooked the chicken breasts by poaching them in water mixed with chili powder, cumin and oregano. This made them very moist and flavorful. The sauce was great. When I poured it over the rolled enchiladas, I was worried that it was too watery, but it thickened up 'til it was just right while in the oven. I especially enjoyed this because it reminded me of the Mexican food back home in Texas. They don't do sour cream sauces here in South Carolina.

Pasta Fagioli

After 27 years of marriage and many recipes, I have finally found a Pasta E Fagioli soup that my husband says tastes like the one his Italian grandmother made! This is a very simple recipe as well. I used Great Northern beans as the cannellini beans were unavailable, but other than that, I made the soup as directed. I know this will be a regular addition to my menus. Thanks!

Delicious Easy Chicken Francese

This was really delicious as well as very easy. I think next time I will cut the lemon juice a little (maybe use smaller lemons). I had to use dried parsley, but it worked out OK. Served over linguini with asparagus on the side, crusty bread and the rest of the bottle of pinot grigio.
