Easy Oatmeal Muffins

Cinnamon Griddle Cakes

I made these for the family and they were a big hit. I omitted the corn syrup per the suggestion of other reviews. I also substituted half of the flour with whole wheat flour. They turned out light and fluffy and the icing is just perfect with them. These will be a favorite.

Buttermilk Chess Pie

I followed the recipe on this exactly and it was just what we were looking for, sweet, smooth and buttery. I made a second pie and added a good handful of toasted coconut to the filling before pouring it into the crust and it turned out great, too.

Flourless Peanut Butter Cookies

I was a somewhat skeptical about this recipe, but made it exactly as written. What a surprise. The cookies had a great flavor and texture and weren't nearly as sweet as I had expected. We rolled the dough into balls about 1 inch in diameter and used a fork dipped in sugar to make the characteristic criss cross design on top. It made 2 1/2 dozen cookies.

Rosemary Au Gratin Potatoes

We fixed this for a family dinner and it was a real success. Every bite was eaten-no leftovers. The only change made was to add some browned, minced pancetta and some shallots to the sauce.

Tater Tot Casserole III

This dish was OK, but I probably won't make it again. The only change I made in the recipe was to reduce the butter to half the amount called for. The taste was good, but I didn't like the texture of the tater tots. It might have worked better with hash browns instead. I also think that bread crumbs might taste better than the corn flakes. All in all, the it was a bit of a disappointment.

Absolute Mexican Cornbread

This makes an excellent cornbread. After reading some of the reviews I only used 1 stick of butter, 3/4 C. sugar and the entire 4 oz. can of green chiles. I also sauteed about 1/4 C. of finely chopped onion with the butter before mixing it with the other ingredients. I used all cheddar cheese since that's what I had on hand. It was very moist and tasty without being heavy. We served it with chili and it got rave reviews all around the table.

Grandma Johnson's Scones

I made this recipe twice this weekend and got rave reviews from the family. I used raisins in the first batch and dried blueberries in the second. I was a little apprehensive since the dough seemed so dry while I was mixing it, but it came together with the kneading and the scones were rich and moist. It was my first attempt at scones.
