Coconut Orange Cupcakes

You just have to try this recipe, I did change it a little and they came out like heaven in a cupcake. Plan on making this my signature cupcake recipe now! I did make a few modifications following recommendations on other reviews. I read that the large orange segments were too much so decided to chop up my oranges. Of course this made them watery so I knew I had to reduce the liquid in the recipe. So in pace of the 1 cup of orange juice I used 1/2 cup of the juice drained from the can of mandarin oranges. To enhance the orange flavor I used 2 teaspoons of Lorann Orange Bakery Emulsion (Although orange extract would work just as well). I mixed the chopped oranges in with the liquids at the beginning. Thank you so much for sharing, not only do these taste delicious but they look so professional too!!!

This was a great tasting recipe, not sure what I did wrong but the cake broke when taking it out of the pan :-( because of that I'm not likely to bake this again.

Lemon/Raspberry Streusel Muffins

Oh Wow, wow, wow... These muffins were just fantastic. I used all the ingredients as stated, the only thing I did different was to add the matter to the muffin cups, then drop in the raspberries then once again cover with the remaining batter. I did'nt want that pink colour that folding the raspberry in the batter often courses. I loved how these muffins bakes, wonderful formed peaks. They taste delicious too. The guys at work are in for quite a treat when I take these to work tonight. Thank you for sharing!

Amena's Triple Chocolate Chip Cookies

Followed the recipe exactly, although I did use white chocolate, semi chocolate and chocolate swirl chips. Sorry Chef John, but I think the taste of these are just 4 star. Certainly not the best tasting chocolate cookie out there.

Pineapple Chocolate Chip Cookies

Wow ~ great tropical tasting cookies!!! I know i'm a little tweaker but I don't like shortening so used butter instead. As the submitted suggested I used a combination of walnuts and coconut. I loved the taste of these cookies, they were a little softer than the usual chewy cookie I would prefer but even so, they were delicious and made a nice change from traditional chocolate chip cookies!

Chef John's Chocolate Mint Brownies

I thought it best to grease the pan first of all, so I used wilton cake release spray. DId not want to make the icing as these were to sit on the counter at work for 8 hours so I changed the recipe slightly by using mint extract in place of the vanilla. Topped off with a little green powdered sugar. Anything mint works a treat for me! I just love both the basic taste and the texture of this brownie, now that I have this recipe I plan on swopping out the extract to make a variety of different flavors. Planning on trying with orange extract next!

Ginger Muffins

I have had this recipe in my box for such a long time, even printed out the recipe many times but never gotten around to making until today. I just love ginger (mind you and spice is a winner for me) so having read some of the other reviews I thought I needed to double the spices. I did change this recipe slightly. I used butter in place of shortening (Just don't like shortening at all). Also used buttermilk as I had a carton that needed using up. I made the muffins as listed but then added 1/4 cup chopped crystalized ginger to the batter. Once in the muffin cups I topped with a little cinnamon sugar to help with the appearance. Great tasting muffin, thank you for sharing the recipe

Basic Buttermilk Muffins

DCKatie is correct in Saying this is a good basic muffin that can be adapted. I used lemon extract in place of the vanilla and added 1 tablespoon of lemon zest. To the final batter added one cup of frozen blueberries, I added a little chopped nuts to the muffin tops before popping in the oven. These cooked to perfection with beautiful high peaks. Thank you for sharing I will certainly be baking these again.

Brown Sugar Instant Oatmeal Muffins

This is such a quick and easy recipe to make. Reading some of the other reviews I was a little concerned with the fact they may be so dry, so I did add the extra egg, 1.5 teaspoons maple extract and used 1/2 cup of sugar. If you are after a light and fluffy muffin then these are not for you, they certainly more robust but I would not say they were dry. Next time I plan on making them with some of the other instant oatmeal flavors like cinnamon and apple. I loved the look of these muffins, nice high peaks like you get from a bakery.

Peach Muffins

I'm going to give these a 5* rating, mostly for the taste and texture. They really are light and melt in your mouth. But presentation I think is only 4*. I don't like how the muffin mushrooms in the pan rather than rise like a bakery muffin. Also they needed a topping in my opinion. I topped with chopped pecans and a cinnamon sugar mix. While these are a pretty good muffin for me the overall is not a keeper as written.

Cookie Jar Nut Cookies

Really not sure what I think of these cookies. The taste is pretty good, but them I'm a huge nutmeg fanatic BUT it was the actual texture I was a little unsure of. Its like they are a cross between cake and cookie, rather strange! I just can't see myself baking these again.

Lots of Chocolate Cherry Cookies

Great recipe, loved the combination of chocolate, white chocolate chips and cherries... Only a small negative is they were a little bit more crunchy than I would have liked, I'm more of a chewy cookie person. Even so a great recipe and one I'm sure I will be making again. Thank you for sharing.

Independence Day Cookies

These are simply the most delicious chewy cookies. I just love the combination of white chocolate, Blueberries and Cranberries. These really are bakery quality and I will certainly be using this recipe again. The guys are in for such a treat tonight when I take these cookies into work!

Amaretto Cake

Cappuccino Muffins

These really were delightful muffins. I did make a few changes. As some reviews were saying these did not have enough coffee flavor I used coffee extract in place of the vanilla. I was in a rush so did not make the topping, what I used was just perfect. Trader Joes sell a Sugar, Chocolate and Coffee Bean Grinder (I just adore this product) so I grinded a large amount over each muffin before baking. Totally perfect and loved by everyone. I will make these always with these changes.

Poppy Seed Bundt Cake III

This cake is exactly what it is, a boxed cake! Nothing fancy and the taste is still that of a boxed cake. For me it was missing something and I think that was sour cream. I make so many of these box cake recipes (just because they are a quick and easy way of me taking baked goods to work every day). A better but very similar recipe is Lisa's chocolate chocolate cake off this site. Just change the cake mix and pudding mix to make the flavor you want.

I followed this recipe exactly, other than using a variety of vegetables. I just loved the taste of the marinade, it was just enough of a flavor without being over-powering. You still got to enjoy the taste and texture of the both the sirloin and vegetables. Thank you for sharing.

Summer Tomato Salad

Great easy recipe, nice summer salad. The other reviews are right there is no dressing but in all honesty I didn't think it needed one. I Didn't have a green onion so used a fine sliced red onion in its place and had to sub dry cilantro for the fresh.

Sock it to Me Cake III

I followed this recipe exactly. I used a Pilsbury Butter Cake mix and also added a little butter extract. Some of the other cooks stated that the cinnamon was too strong in the center, so I decided to swirl this through o even out both the taste and texture. Very quick and simple cake. Thank you for sharing.
