Seafood Chowder
Loved it! Made a double batch - 1 with neufchatel cheese and the other with low fat cream cheese. My decision to make this came when I was cleaning my freezer out and found 2 lbs of sea scallops. Unfortunately the scallops were bad so I substituted 2 lbs shrimp, 1 lb crabmeat and a 51 oz Costco container of chopped clams. I divided all seafood among both batches. I also used the clam juice from the can...divided. It made the chowder a bit thinner, which also extended the servings. I ended up simmering the soup mixture close to one hour (before adding the seafood) because my husband was running late for dinner and I didn't want to overcook the seafood. It turned out great!

Slow Cooker Pulled Pork
This is so easy and delicious. I've told quite a few friends the recipe and they keep waiting for more ingredients. Skeptical, they try it. Yummy! I try to use Root Beer made with cane sugar - that's my only change. :)

Three Cheese Garlic Scalloped Potatoes
Wow - easy to make and completely delicious! Doubled the recipe for a 10 person potluck and slightly changed to make it lower in fat. Subbed half and half for heavy cream, used low fat provolone, low fat chedder and halved the butter. Due to a late start with the potluck, the dish heated at 200 degreea for an extra 45 minutes or so in the oven...no problem at all. Yuh-hum is all I have to add. Superb!!
