Simple Strawberry Sauce

Reviewed: Jul. 9, 2011
What a great recipe!! And truly simple and quick. I used Splenda instead of the sugar and served the sauce on top of angel food cake, Yum.

Candied Carrots aka Glazed Carrots ~~sugar-free & fat-free

Reviewed: Jul. 8, 2011
This is an easy and tasteful way to make glazed carrots. It's nice to have a recipe for glazed carrots that doesn't require butter, margarine or oil. I have made these several times now and use low sugar preserves. Thanks for sharing.

Potato Chip Chicken

Reviewed: Apr. 3, 2011
We really enjoyed this delicious recipe. I increased the recipe by half and used 3 boneless skinless chicken breast halves which I butterflyed into 10 pieces (we don't like thick chicken!) and the amount worked terrificly. My husband couldn't stop raving about this chicken. Thanks for sharing!!!!

Sorry we found this to be just average. Not terrible but nothing special. It basically tasted like yellow cake.

Zucchini and Potato Bake

Reviewed: Mar. 1, 2011
This was really good. I peeled the zucchini but otherwise followed the recipe as written. I think the next time I make it I will add a little more red pepper. A great way to combine veggies and starches into one dish.

Corn Souffle

Reviewed: Feb. 15, 2011
This was really yummy. After two bites hubby said "This is a keeper!" and I agree. I made two minor changes. I used 2% milk (because it 's what I had in the house) and I substituted Splenda for the sugar. I will most definitely be making this again. Thanks for sharing.

Pecan Rice

Reviewed: Feb. 6, 2011
This a very tasty way to make brown rice.Except for substituting parsley flakes for fresh and following te advice of other reviewers and using 2 and 1/2 cups of water, I followed the recipe as written. We enjoyed this and I think it would be fancy enough to serve for company. Thanks for posting

Quicker Zesty Chili

Reviewed: Feb. 6, 2011
We really enjoyed this recipe. Like another reviewer I didn't have fresh tomatoes, so I used canned diced tomatoes and instead of water I used the liquid from the can (I cut the recipe in half so as to only make 4 servings and one 15 oz. can equaled one cup of tomatoes ) which I drained and measured. If it hadn't been enough I would have added water. The spice blend in this recipe was excellent as written. Thank you for sharing.

Crispy Coconut Chicken Fingers

Reviewed: Jan. 29, 2011
We absolutely love this recipe. Both the chicken and the dipping sauce are terrific & tasty. The only change I've made is to spray the chicken with butter flavored cooking spray this saves a bit on calories and fat.

Coconut Carrots

Reviewed: Oct. 16, 2010
I made this using one pound of baby carrots and a little more than 1/3 cup of cream of coconut (the can I had in the house was 15 ounces). After cooking the carrots and cream of coconut, I put the mixture in the food processor and mashed them. They were a really tasty side dish. Both my husband and I enjoyed them.

Honey-Mustard Baked Chicken

Reviewed: Jun. 2, 2010
This was definitely a tasty dish I liked the combination of the sweet of the honey and the "kick" of the curry powder. It's a keeper that I will probably make again.

Strawberry Soup IV

Reviewed: May 16, 2010
we really liked this one. I have made it several times, always as a soup and although people have said it was good enough to be a desert, I definitely like this as an alternative to a hot soup. Unlike some other strawberry soup recipes on this site this one is dairy free which can be a plus!

Raisin and Spice Brown Rice

Reviewed: May 16, 2010
Very yummy.A definite keeper. The only change I made was to use vegetable broth instead of chicken because it was what I had in the house. I will probably leave out the celery the next time I make it, but that's just a matter of personal taste.

Honey Mustard Chicken with Pretzel Crust

Yum. We really enjoyed this. I butterflied rather than pounded the chicken. That was the only change I made. Hubby says it's a keeper. I really liked the sauce and will probably also use it on other chicken recipes. Thanks for sharing Kathleen.

Bow Ties with Veggies

Reviewed: Apr. 22, 2010
This was actually quite tasty and easy to make. However, I think that next time I make it (and there probably will be a next time) I will add either diced tomatoes or red bell peppers for the color. I did peel the zucchini, maybe that was why it was so bland looking. Over all a good recipe. Thanks for posting.
