Quinoa Tabbouleh

This is amazing!!! It's exactly what I was looking for -- but BETTER! I followed the recipe exactly but doubled it so it would feed more people. After taste-testing I did add more olive oil and lemon before serving but that was personal preference, it's perfect as written. Enjoy this amazing dish with friends, they'll thank you for it!

Ground Beef for Tacos

I was skeptical....but this was FANTASTIC! I used Taco Seasoning I from this website and used salsa instead of ketchup. Home run. I will absolutely make this again and recommend it. Omit the water though.

The Real Mojito

Best mojito I've ever had. Best if made in a pitcher, stirred very well incorporating ingredients that settle on the bottom, and then pouring into glasses. A winner!

Mole Sauce

This was our first time making molé so our only comparisons are from restaurants but this is a truly amazing recipe. Incredibly delicious. The ingredients are available at any larger chain grocery store. This recipe is worth every second it takes to make. We also made "the real mojitos" from this site and our evening was perfection.

Spicy Lime Grilled Shrimp

Great recipe, only thing preventing five stars is the amount of cajun seasoning listed. Its just too much. Too spicy, too salty, too much everything and not in a good way. ***USE 3 TEASPOONS CAJUN SEASONING*** If you use more your shrimp will be far too salty. Add cayenne or even better, add crushed red pepper to add zing to your shrimp. After they are grilled squeeze juice of half a lime over shrimp. Amazing! :)

Seafood Enchiladas

GREAT recipe! I tweaked to maximize the ingredients I had on hand. I think the beauty of a great recipe is that it lends itself to tweaking due to ingredients on hand or dietary limitations. Here's the breakdown: 1 lb. shrimp (omitted crab, didn't have any), used shredded mozzarella cheese (didn't have colby), used 1/2 C heavy whipping cream and 1 C 2% milk (didn't have half-and-half) after making a roux with 1/4 C butter and 5 T flour (recommendation from reviews). All else stayed the same although I did season the mixture liberally with salt, I think this is an important step not listed in the original recipe. Even with the tweaking it turned out great. Enjoy! (PS-I'll totally make this for friends!)

California Grilled Veggie Sandwich

AMAZING! I made this exactly as the recipe stated and its perfect, no tweaking/changes needed. This one is a home run. (after tasting we decided to add fresh mozzarella and melt it slightly under the broiler - it made the sandwich that much more decadent!)

Super Bowl Bread Bowls

The two stars are for taste, otherwise it would have gotten 1 star. I know this is harsh but I've made this recipe THREE times, two as bread bowls and once as a loaf. It didn't rise any of the three times, at least not in the oven. It rose very well when it was proofing but somehow in all three instances (two oven bakings, one breadmaker baking) it fell during baking. Sorry, Darlene, the bread tastes great but I needed a "go-to" recipe and this isn't it.

Actually Delicious Turkey Burgers

5+ STARS!!! Added per other reviewers advice: 1/4C red bell pepper and 1/4C onion, both finely minced, 2T soy sauce, 2T worcestershire sauce, 1 whole egg instead of just the egg white, 1T Montreal steak seasoning and extra breadcrumbs. (For mine and hubby's I added red pepper flakes and cayenne.) AMAZING! Thanks Trudi!!

World's Best Lasagna

Great meat lasagna, only four stars (instead of five) because it took all afternoon to make. Not difficult, just time consuming as good lasagna can be. Possibly too much meat but still a great lasagna.

My Best Clam Chowder

Best clam chowder I've ever had, HUGE raves from the family, including my picky kids - and my first time making clam chowder! Definitely a keeper. A very simple, easy recipe to make. Don't forger to add the minced or chopped clams right before you serve the soup to keep them from getting tough. Also, I used whole milk instead of half and half, we are slightly lactose intolerant and we didn't need the extra fat (who does?). If you find that the consistency is thinner than you would like, add a slurry of 2T cornstarch to 2T milk, stir well and add to chowder. Amazing! (Next time I will add more clams and more potatoes.) Enjoy!!!
