Asian Coleslaw

This is a really great slaw to take on picnics since is contains nothing that will spoil. As a timesaver, I found out you can use 1 3lb bag of warehouse club pre-shredded coleslaw mix and the dressing quantity is the perfect. Changes I made to the dressing (based on personal taste): I used extra chunky peanut butter (nice textural crunch from the big pieces of peanut), I added 1.5 tbs Sesame Oil and 1 tbs chili-garlic paste (available in just about every grocery store) for just a little heat. Makes extra, it's going to be a hit at your party!!!

Beef Brisket with Chipotle Tomatillo Sauce

We just got an electric pressure cooker so I tried this recipe. The only change I had to make was to use fresh tomatillos since I couldn't find canned (I softened them up in a skillet then followed the recipe). The brisket turned out tender, tasty and fast. Don't be afraid to use the entire can of chipotle peppers since the heat cooks out quite a bit. Excellent recipe but I think I'll keep making it with fresh tomatillos as they seemed to add a good tang to it!

Best Ever Brisket

The name says it all! I followed the recipe exactly except I used a 12 oz. bottle of Guinness Beer instead of the beef broth and it came out perfectly tender and moist. The beer seemed to add a little something to the taste. My family devoured it and it's now on my list of standards. Very easy to prepare on a busy day...just throw it in and forget it. What more can you ask for?!?

Roasted Tomato Salsa II

Great recipe! It tastes like the salsa I buy at a local grocer. I did make a few changes though. I did not use the water, the salsa seemed to have the right consistency without it. I added the juice of 1 lime. I also added some chopped cilantro. Instead of the pepper sauce, I simply cored and seeded 2 jalapeno peppers and roasted them with the rest of the stuff and it was excellent!!!
