Crispy Mashed Potato Pancake

These were delicious! I used 2 cups cold mashed potatoes and 2 eggs, plus 2 TBS flour per previous reviews. Italian seasoning didn't seem to fit with fried mashed potatoes? So I added finely minced garlic and green onion, crumbled cooked bacon, a handful of shredded cheese, salt, pepper and cayenne. My pancakes were essentially fully-loaded baked potatoes fried in a pan. Not something we will eat very often! I cooked mine in the leftover bacon grease. I turned the stove up to medium high to get the oil nice and hot and dropped them in by the spoonful and using the greased spatula I quickly shaped them in the pan and pressed down lightly to flatten to 1/2 - 3/4 inch thick. Then, turn the heat down to medium and leave them alone for eight minute. Gently flip and cook eight more minutes. I had no trouble keeping them together once they formed a nice crust. My husband inhaled them, the only problem is I didn't have more mashed potatoes!

Parsleyed Rice Pilaf

Great for instant rice recipe. Used dried parsley and 1/2 packet of onion soup mix because its what I had. Surprised at how great it was. YUM!

Grilled Jalapeno Tuna Steaks

This marinade was absolutely delicious!! I had to pan sear mine in a cast iron and topped with some reserved marinade at the end of cooking. I'm sure grilled would be ever better. I use this marinade now on lots of stuff.YUM!

Dirty Diapers

Had these for Memorial Day weekend dinner (no grill). Tasted like burgers - YUM! I used 1lb ground beef and two cans of crescent dough and didn't cut them in half. I seasoned the meat well with onion/garlic powder and salt & pepper. Also added some shredded cheddar and beef broth to help hold the meat together, and used american cheese slices on the crescents. Dipped in ketchup and mustard. There were only two of us so I froze half to eat later. Husband loved them!

Delish! I used 32 oz fat-free yogurt drained in colander on coffee filters overnight (you'd be surprised how much liquid drains off). 2 small cucumbers peeled, quartered, seeded then chopped fine (I salted then placed between paper towels weighted with plates for an hour). Grated 5 cloves of garlic (makes it VERY garlicky - might cut back if you're not a fan) 1 TBS lemon juice, 1 TBS vinegar, 3 TBS olive oil and a sprinkle of sugar and lemon zest. It came out excellent! I've made it without draining and the flavor is somewhat different and the consistency is more salad-dressing like. I much prefer it this way. Great as a veggie dip!

Jill's Salsa

Excellent salsa. I used 1 can diced tomatoes and 1 can rotel, added 1/2 chopped white onion and only had one jalapeƱo so also used a small habanero. Forgot about the oil and didn't really need it. Won't buy store salsa again - too easy!

Homemade Crispy Seasoned French Fries

These were great... I let the fries sit in ice water for 30 minutes and dried. Then, mixed up flour/paprika/garlic and onion powder plus some chili powder - added water to get pankacke batter consistancy. Dropped in the fries and shook'em around like buffalo wings and used tongs to drop them in the oil for 2 minutes. Drained them and let them cool for a few seconds - then returned them to the oil for 5 more minutes. Came out perfectly crunchy and lots of flavor.

Deviled Eggs

i used recipe for four eggs and it came out runny (my fault). However the recipe is delicious even runny!! used a little less salt per reviews and topped with a lil homemade mayo. great recipe!!
