Cinnamon Belgian Waffles

Spectacular! Best waffles I have ever tasted. Take the time and whip the egg whites. Makes the waffles the lightest I have ever had. A little prep time, but not much and so worth the results. My husband loved them too. Did add a little more cinnamon than calls for as we love it. Thanks Stephanie for a great recipe which will be used time and again.

Swiss Chard with Pinto Beans and Goat Cheese

This was very good. Used black beans and sauteed some onions with the garlic and red pepper. Used Feta Cheese. This recipe is a great vegetarian mail course or can be served as a hearty side dish. n

Grilled Portobello Mushrooms

Wonderful flavor and texture. Who can't use a vegetarian meal once in a while. I uded olive oil instead of canola. We melted blue cheese in the well of the mushroom and topped with lettuce and tomato on a kaiser roll. Best "burger" I have ever had.

Veneto Chicken

This chicken recipe was great. I used boneless, skinless, thin sliced chicken breasts. I browned very well as my husband does not like pale chicken. I added garlic, some thyme and did not add any salt. I doubled the wine and added about a quarter cup or so of chicken broth so there would be more liquid. I also sauteed the mushroons before adding. I only had to cook about 15 minutes and removed the chicken. I added the vinegar and sauteed mushroons and let the sauce develop for 5 minutes then added back the chicken and let it pick-up the flavors of the sauce. Will definitely make again. This goes great with Corn and Rice Medley on this site.

Corn and Rice Medley

This recipe was great. I did not add butter to the rice and it was great. I also cooked the rice in low-sodium chicken broth for more flavor. Cut shallots to two and did ot add any sugar, salt or mint. I did add parsley and added finely chopped and sauteed red and green papper with the corn. My husband and I loved it.

Oven Stew with Burgundy Wine

This is a very good stew with a different flavor due to the mustard and the wine. I found it was melt in your mouth tender after 3 hours. I added potatoes and mushrooms and doubled the liquid. My family loves a lot of gravy.
