Jumbo Fluffy Walnut Apple Muffins

My whole family raved of these muffins. I made a few changes simply because of what I had at the time. Instead of white flour, I used 1 1/4 cups whole wheat flour and 1/2 cup old fashioned oats. I also substituted plain almond milk for the milk. And lastly, in the crumble topping I used 3 T brown sugar in place of the white sugar. Because, I do not have a jumbo muffin tin, I made 17 smaller muffins. The end result was a melt in your mouth delight. These muffins are moist on the inside yet slightly crunchy on the outside. There is no question that we will make them again..

Honey Bubble Ring

Delicious! This recipe produces a monkey bread that is less gooey and less sweet than a standard butter and brown sugar recipe. But I appreciate that. My family always thinks that monkey bread is too sweet. I did make a couple of changes, not because the recipe is bad, but to cut down on the sugar content. Instead of honey and sugar, I used 1/4 cup agave, 1/4 cup pure maple syrup, and 1/4 cup plus 1 T. Splenda, keeping everything else the same. I was a little aggressive with the half dipping of my biscuit pieces, and i ran out towards the end. So at the end, I mixed together 1 t. Agave and 1 t. Orange juice to pour over the top of the pan before baking. We will definitely make this again!

Bacon Wrapped Shrimp

Heart-Healthy Recipe: I made this tonight with the recommendation of using garlic and butter to season the shrimp, but I did substitute the butter with 3 T. Smart Balance melted with 1 t. garlic powder for 40 large shrimp. This was a great ratio. Also I substituted low fat turkey bacon for the bacon, and as many mentioned, I did cook the bacon slightly. But seeing as how, turkey bacon crisps quickly, I made sure not to fully cook it before wrapping the shrimp. Keep it soft and mailable so as to wrap the shrimp. Then I cooked the bacon-wrapped shrimp on my George Forman, at 400 degrees for five minutes. They were delicious and perfect, not chewy or rubbery. Even my picky four-year old loved them! With these changes, these are healthy enough to eat as the main protein.

Emily's Famous Banana Oat Muffins

The flavor is great. I substituted 1/2 cup stevia and 1/4 cup splenda brown sugar to reduce the sugar content. I also substituted applesauce for the oil. The muffins were still quite dry as others have mentioned. Next time I would increase the applesauce to 3/4 cup or use 1/2 cup applesauce and 1/4 cup plain fat free yogurt.

Bananas Foster Monkey Bread

Excellent! Per the last review, I reduced the white sugar to 1/4 c., the butter to 1/4c plus 1 T, and the brown sugar to 1/4c plus 1 T. Due to the sweetness of the bananas this is all you need. I also used one large can of reduced fat wheat grands biscuits and sliced almonds in place of the pecans. My husband, two-year son and I loved it, ate the whole pan.
