This deserves 5 stars because of its potential. The meal was delicious, even the carnivores loved it. I will make a few changes in the future though... Instead of toasting the bread on the grill with the cheese side up, I will put it under the broiler so the cheese side is grilled instead. The sandwich was so crunchy that when you bight down, the filling falls out. Portobello mushrooms are a must and I recommend marinating the vegetables in a red wine vinegar in advance. Overall- wonderful and I can see this being a staple in my weekly meals. Thank you!
