Corned Beef and Cabbage I

Very good! Make sure the pot you are using is HUGE. I tried with a regular sized one and could not get the veggies in. I ended up taking out the beef and cooking the veggies in the left over water while the beef rested. Worked perfectly. Will make again and again!

Green Punch

Very yummy! Kids and parents finished it in no time at a St. Patrick's Day party. Between the pineapple juice and the oj concentrate, 2 cups of sugar sounded way too sweet. I decided to omit the sugar altogether and add it if necessary and there was no need. Without sugar, it was refreshing and fizzy! Will def make again.

Meringue II

Perfect! I don't even really like meringue but this recipe is so tasty. I made this first before making a coconut cream pie. I read how the meringue won't slide off the pie if you top the pie while the filling is hot off the stove. I then baked the pie and the meringue together for about 13 minutes. It turned out so perfectly, it made me look like a professional. Thank you for the recipe!

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

These were good but not great. I really wanted to like it because of the rave reviews. Kudos to the inventor for it is a creative dish with lots of flavors. I wasn't crazy about the mayo so I made it according to the directions first and then added 4 oz of sour cream. This seemed to "lighten" it up a bit. It is unclear where the cilantro/cumin mixture goes, so I spooned it on top of the fish. Not sure if I will make again.

Best Carrot Cake Ever

I have to give five stars because it was my fault of why it didn't turn out perfect. Mine was waaaay over cooked. It seemed as though it was unclear on how long to cook it with the different pans. I read some other reviews but the 9x13 glass pan at 375 for 50 minutes was too long. I will attempt again to get it just right. Everyone still loved it anyway.

California Grilled Veggie Sandwich

This deserves 5 stars because of its potential. The meal was delicious, even the carnivores loved it. I will make a few changes in the future though... Instead of toasting the bread on the grill with the cheese side up, I will put it under the broiler so the cheese side is grilled instead. The sandwich was so crunchy that when you bight down, the filling falls out. Portobello mushrooms are a must and I recommend marinating the vegetables in a red wine vinegar in advance. Overall- wonderful and I can see this being a staple in my weekly meals. Thank you!

Pecan Cream Cheese Pie

Very delicious! I doubled the recipe to make two pies and had so much of the filling let over, I wish I had a third crust! I threw out a lot of the cream cheese mixture and I my pies were still heaping well above the surface. I also added some cinnamon to the pecans before putting them in the oven.

Spinach and Feta Pita Bake
