Creamy Earl Grey Rice Pudding

I did double because I knew my husband would want to have more on hand. First I don't see why they have you change to a clean pot after cooking the rice. Also why add the milk in two stages? I can see cooking on the stove instead of baking but this required a lot of stirring. My husband liked this but I think next time I will use a normal recipe and just use tea to make the rice instead. My tea flavor was also weak but that is my fault for not following the directions. I just made tea in the pot as normal and then added the rice to it.

Beer Pancakes

Might have been ok with mild beer but my beer made it very bitter. They were aweful. In future I will only use my beer for beer batter fish.

This recipe was too sweet for us so we try to cut down on the sweet items when we make this. I tried changing too many ingredients once and that was a big mistake.

My husband loves this and I think it is a good way to have salmon even though I am not fond of salmon. Nothing tastes better than smoked but that is a lot more time and effort.

My Best Clam Chowder

My husband's favorite. I usually use about 1 geoduck clam either fresh or frozen instead of using store bought. works well but is better the next day. Nice basic clam chowder.

Big Soft Ginger Cookies

I tried using the oj instead of water like other people. I didn't really taste it. The overall flavor was very good but my cookies came out too flat. After these cookies cool they get hard which is ok if that is what you are expecting. I also tried using 5 tablespoons brown sugar instead of molasses as was suggested by another user. I will make these cookies again but will try to adapt them further. Maybe will put them in the fridge next time or follow other suggestions.

Easy Sausage Strata

Buttery Soft Pretzels

The baking soda wash made for a great flavor and made it so that I could watch them brown in the oven which was great but I was dissapointed that these were still more like bread sticks for me. Maybe it was my own fault for putting the ingredients in the bread machine and setting it to dough cycle. I will make this again but wish that there was a nicer glazing on them. I think maybe I will try also putting on an egg wash. I also thought that this had too much flour. At first I figured it was because they were pretzels and that the dough should be quite dense. Now I think I agree that it is too much and will try 3 cups as others have suggested.

Chicken Chimi in the Oven

My husband loved this recipe. The way I made it was a little too spicey for me. I did not bother to process this because I was in a hurry. I used a whole jar of organics chipotle salsa. I do not have chili powder so used 1 teaspoon smoked paprika scant 1/8th teaspoon cyan pepper. I used 2 chicken breasts and was not sure how much they weighed and 1 large can of refried beans. I could not find 10 inch totrillas so got the medium soft taco size and it ended up making about 14 chimis. I will make it again this way for my husband but maybe use mild salsa for me. We also used plain yogurt to dip ours in because we like sour cream but try to stay away from the fat.

Rhubarb Cobbler

I used 1 package of remlinger farm rhubarb and just doubled everything else aside from sugar topping. I only used a total of 3 talbe spoons. I also cooked in 9x13 pan and it took about 30 minutes to cook. It may have taken longer because I had to go to town and buy milk when I went to mix the topping I noticed I was out so the filling had time to cool. We both loved this one. It would be good mixed with other fruit but if I have enough rhubarb I will make it this way.

Banana Banana Bread

My husband and I loved this recipe! I only used 4 bananas (about 2 cups)and it came out just right. I used a glass bread pan and baked it 65 minutes on the middle rack in my new oven and it came out perfectly. The best thing to put on it when it is hot out of the oven is nutella or just penut butter. They get all melty and warm. I sprinkled some nuts on top but did not mix any in. That was nice for me because I like nuts and nice for my husband who doesn't and may have scraped them off.

White Chocolate Raspberry Cheesecake

This cheesecake was very good. I will in future use twice as much oreos and less sugar like other people suggest. Also putting a pan on the rack below to catch the dripping butter would be good. Reading the cheesecake article really helped and although I didn't have a cookie sheet that would fit to make a water bath I did bake this cheesecake for 55 min and then turned off the oven and let it finish cooking and it came out perfect without sinking or cracking (I got a few small cracks when I put it into the fridge). I will be making this for valentine's day!

Homemade Flour Tortillas

My husband and I loved these! I did not change the recipe aside from making them bigger. Next time I think I will try harder to make them thinner and maybe smaller. That can be hard to do as the shrink when rolled out. It was fun to make these instead of having to drive all the way to town to get store bought ones. These are way better although a bit of work. I think we will be eating these more often for tacos and tortilla soup....

Baked Yam Fries with Dip

I would make this again and like that you can use more or less yams and it stays the same. I like my fries crispy though and that effect can be hard to get this way. I made sure to slice mine thin and baked at 400 but some on the edges burned. I will use an airbake pan next time I cook them. I also used a package mix of mango curry dip instead of tacco so not sure how that will taste. I think most dips would be good with this.

Flourless Peanut Butter Cookies

These cookies are hard and not really cookie consistancy. It was fun to try but the end result was not good and I will not be making them again. I think the cookies might have been less fragile if they were smaller but I made exactly 1 dozen. If I were to make these again I would make them about the size of a quarter. I think I would also add less sugar and some vanilla as others have.
