Quick Lemon Poppy Seed Bread

Reviewed: Apr. 15, 2005
WONDERFUL!! i usually don't freeze breads, but because this recipe made two breads i froze the one we didn't eat. when i defrosted the second to eat at a later date i was amazed at the great taste - almost better than eating the first day it was made! next time i plan on serving this bread i'll make it a day ahead.

Pecan Pie Muffins

Reviewed: Apr. 12, 2005
the only reason i rated theses only 4 stars was because T's mom wrote that we could line the muffin pans with paper muffin liners - i did and it was a real problem to remove the paper. what little muffin we could scrape off the paper was really delish. i'll try these again but will grease and flour the pans really well.

Charline's Sweet Potato Casserole

Reviewed: Nov. 27, 2004
FANTASTIC!! out of necessity, i had to prepare this ahead of time, i made the sweet potato mixture and refrigerated it. i also made and refrigerated the topping mixture. when i was ready to bake the casserole, i had to break-up the topping and sprinkle it over the sweet potatoes. the result was a very crunchy topping - totally amazing!! will only use this recipe when making a sweet potato casserole. thanks diana - you hit the jackpot with this one!!!

Oatmeal Peanut Butter Cookies

Reviewed: Oct. 21, 2004
i was just taking the last sheet out of the oven when my 6 year old grandson walked in. he wanted to taste a cookie. he took two bites, his eyes light-up and he told me these cookies were "AWESOME" (he wanted 6 more!) later that night my husband agreeded. the only thing i did differently was to add 1 1/2 cups chocolate chips.

Coconut Cream Pound Cake

Reviewed: Jul. 8, 2004
FANTASTIC!!! didn't change a thing. we were having company for dinner so i made this in the morning for our dessert that night. everyone raved. we ate as much as we could and had some leftover. i was afraid to have it around (iknow i would have eaten the rest in one sitting) so the next day i sent it with my husband to take to his office. he said that his staff devoured it by l0:00a.m. a sure keeper!!

Extreme Banana Nut Bread 'EBNB'

Reviewed: Apr. 17, 2004
"this is the best banana bread you have ever made" said my husband. i have to agree - this was amazing and so easy. the only thing i did different was to roast the walnuts before adding to the batter. i do have to add a #6 to the tips list - do not make right after having the flu and barely eating for 5 days - yep - that was me - my family doesn't know that this recipe made 2 loaves!!
