Chicken Arroz Caldo (Chicken Rice Porridge)

I have also made arroz caldo with whole chicken pieces. My family asks for this especially during flu season with increased (may double or triple) amounts of garlic & ginger for their medicinal benefits -- antibacterial, antiviral, breaks fevers, clears head congestion, opens airways. More effective than chicken noodle soup.

Easy Cranberry Orange Relish

I've been making fresh cranberry sauce for Thanksgiving for years with a whole orange (including peel and pith) and a full cup of sugar. I did this recipe as instructed. I agree with the other reviewers that the cinnamon is overkill and took away some of the cranberry-ness of the sauce. Sad. Next time, I'll stick to my original easy simple recipe with 3 ingredients.

Holiday Cranberry Relish

The 5 stars rating is because DH and eldest daughter loved it with raspberry Jello. Just as good the 2nd time with cherry Jello, but will do it raspberry next time. Cut down the sugar to 2/3 cup and it was still too sweet with the jello. Will keep tweaking but its going to be a regular side dish for our special occasion meals.

French Toast Casserole

Made this for a church potluck. Used a 9 x 13 casserole dish which was wiped clean. Got rave reviews. Did not have enough milk for the recipe so I supplemented with SILK COCONUT MILK which gave the casserole a really nice flavor and texture. Will add shredded coconut next time. Added 1/2 cup RAISINS--will increase to a full cup next time. This is a very versatile recipe that you can embellish with chopped apples, nuts, etc. Thanks for sharing.

Bacon Quiche

Heartily approved of by DH. He especially liked the crusty flaky bottom of the quiche. Used 6T of bacon crumbles (for salads) that I wanted to use up, added 3 stalks of green onions, 2% milk. Will use less bacon crumbles next time. Melted the butter in the pie plate to coat it, then poured the rest in batter mix. Did have to blot off the excess butter pooled on top of the quiche so will reduce amount to 2T next time. Also want to try it with shredded carrots. Thanks for sharing this recipe.

Peach Cobbler Dump Cake I

I prefer a cobbler over cake but DH and friends raved about this recipe served with vanilla ice cream. I used 2 x 29oz cans of peaches in heavy syrup, assembled the ingredients in the casserole dish the night before, I put some of the cake mix on the bottom of the dish as recommended, mixed in instant oatmeal to the top cake mix layer. I assembled the ingredients the night before and baked it 4 hours prior to serving. I'd like to try this with other fruits as recommended by other reviewers. Next time, I will use light syrup fruits next time or skip the sugars if I use heavy syrup; put >1/3 of the cake mix in the bottom; mix in quick cook oats and/or chopped nuts with the top layer for more crunch. Thanks for the recipe.

Blueberry Zucchini Bread

Excellent. Per reviewers' recommendation, subbed apple sauce for some of the oils, subbed wheat flour for some of the white. Used thawed frozen blueberries (4 cups was perfect amount) and zucchini. I gasped at the cinnamon amount, but it was just right. Sprinkled raw sugar on my muffins for a nice crunchy top. Sprinkled Quaker Oats instant apple/cinnamon oatmeal (what was available) on top of a loaf for an attractive and delicious touch.

Udon Peanut Butter Noodles

Made this with leftover beef/beef broth, carrots instead of red bell pepper. We reserved some of the beef broth for family members who prefer the soupy version. This is comfort food.

Chicken Pot Pie III

DH says it's the best potpie he's ever had. Used cubed leftover Costco roasted chicken, Cream of celery + cream of chicken condensed soups, a splash of white wine. Instead of frozen veggies, I sauteed minced garlic, onions, chopped celery, chopped carrots and peas. I would've liked more thyme, but DH says this is just perfect.

My Ambrosia

Made it for a New Years Eve potluck and it was a hit! It was a perfect complement to the Honeybaked ham that the hostess served along with the other green salads. I was looking forward to taking home the leftover but the hostess gave me back my clean bowl. When asked for the recipe, I don't bother writing it down for them. I simply say, "Allrecipe.com" and they know what to do. I made the recipe as is, minus the walnuts (nut restriction) and marshmallows (wanted the salad to be less like a dessert). Everyone wanted to know what was the crunch in the salad and were excited to know about the toffee bits. Used pineapple tidbits, instead of crushed. I added the mandarins oranges as late in the mixing as possible to minimize crushing. NOTE: Drain fruits very well to avoid soupy salad. I am now looking for the next occasion to make this again and try to whip my own heavy cream instead of CoolWhip.

Simple Turkey Chili

Enjoyed this recipe. Made it with ingredients I already in the pantry: chopped celerty and canned green beans instead of kidney beans, tomato juice instead of water, heaping T of Penzey's Chili 3000 spice mix, 2 T dried chopped onions (I was out of fresh onions), garlic powder (fresh minced is always better). Served with sour cream, mexican cheese, corn tortilla chips and green onions.

Chicken Breasts with Balsamic Vinegar and Garlic
