Veggie Lasagna Florentine

Reviewed: Sep. 25, 2009
This one's a keeper! A hit with my daughter's tennis team. I cut the veggies in chunky bits, used diced tomatoes coz I LOVE texture in my food. I want to try the food processor next time. Used no-boil noodles & ricotta. A very delicious hearty meal. I will make it again for another big group gathering. Thanks for sharing the recipe.

Soft Oatmeal Cookies

Reviewed: Sep. 25, 2009
Made this for me and put it the freezer for future snacks. Started noticing my DH and my health conscious 16 y.o. visiting the freezer more than usual and realized they're after my oatmeal cookies! Great right out of the freezer. I added raisins & chopped peanuts.

Bacon Quiche

Reviewed: Nov. 1, 2009
Heartily approved of by DH. He especially liked the crusty flaky bottom of the quiche. Used 6T of bacon crumbles (for salads) that I wanted to use up, added 3 stalks of green onions, 2% milk. Will use less bacon crumbles next time. Melted the butter in the pie plate to coat it, then poured the rest in batter mix. Did have to blot off the excess butter pooled on top of the quiche so will reduce amount to 2T next time. Also want to try it with shredded carrots. Thanks for sharing this recipe.

Beef Stroganoff III

Reviewed: Jan. 16, 2010
OH. MY. GOODNESS! This is delicious! The RICH flavors transported me to some fancy restaurant, I couldn't believe I cooked it. And it was SO easy. I followed the suggestions of soaking the beef in wine before cooking, used fresh mushrooms sauteed with the sliced yellow onions and minced garlic glove. I served it over steamed white rice. My husband sprinkled sliced green onion tops on his. I think fresh parsley would perfect it for me. This one's going to be a staple for our family. Thanks for sharing the recipe.

Chicken Pot Pie IX

This passed my finicky DH's test. Chicken pot pie is one of his most favorite comfort but it has to be just so. This was 'JUST SO!' Thanks for showing me how to make it right.

No-Guilt Zesty Ranch Dip

Just finished making it right now, most of the ingredients already in my fridge and pantry. My health-conscious teenage daughter is doing more than taste-testing that I may not have enough for my work's dip day tomorrow. AMAZINGLY GOOD!

Wonderful summer treat. Couldn't make the next fast enough. My daughter add this to her deli meat sandwiches for school, instead of the tart pickles.

Slow Cooker Chicken Stroganoff

Reviewed: Oct. 21, 2010
Excellent recipe. I used whole chicken cut up pieces (breasts, thighs, legs, wings). I removed the bones as I shredded the chicken before serving. I added sauteed mushrooms. Next time I would only add one packet of Good Seasons dressing mix, instead of 2, for the 8 pieces of chicken. One can of soup and one cream cheese made plenty of sauce, no need to double. Used butter. Served it over egg noodles. YUM! It will be a regular for family gatherings.

Creamy Butternut Squash With Cinnamon Soup

Flavorful fall weather treat. Will make it again without the cayenne pepper. Rich creamy texture. Tasted fine with vanilla soy milk; probably could do without the pinch of sugar.

Taco Casserole

Reviewed: Nov. 5, 2010
Subbed the diced tomatoes and tomato soup with salsa and it was too dry. Next time will do salsa + diced tomatoes. Used taco seasoning from Taste of Home recipe. Used tri-color rotini, instead of macaroni.
