Baked French Toast

Followed the recipe as written and served for Easter brunch. My family raved, but I found it bland in flavor. Could be sweeter and needed more of the spices. Had a hard time fitting in the slices in the baking dish, I wondered if cubing the bread would be better. With all the tweaking this recipe will require, I will explore the other recipes instead.

Cappuccino Muffins

I gave it 4 stars because my daughters approved of the final product. It was good but did not have the coffee flavor I wanted. I used using instant Medaglia d'Oro instant espresso powder, half of mini chocolate chips and topped it with Trader Joes sugar/chocolate/coffee bean grinder. Next time, I will double the coffee amount.

Blueberry Zucchini Bread

Excellent. Per reviewers' recommendation, subbed apple sauce for some of the oils, subbed wheat flour for some of the white. Used thawed frozen blueberries (4 cups was perfect amount) and zucchini. I gasped at the cinnamon amount, but it was just right. Sprinkled raw sugar on my muffins for a nice crunchy top. Sprinkled Quaker Oats instant apple/cinnamon oatmeal (what was available) on top of a loaf for an attractive and delicious touch.

Magic Cookie Bars from EAGLE BRAND®

Holiday Cranberry Relish

The 5 stars rating is because DH and eldest daughter loved it with raspberry Jello. Just as good the 2nd time with cherry Jello, but will do it raspberry next time. Cut down the sugar to 2/3 cup and it was still too sweet with the jello. Will keep tweaking but its going to be a regular side dish for our special occasion meals.

Make-Ahead Mashed Potatoes

Creamy Cheesy Scrambled Eggs with Basil

Used what I had in my fridge/pantry: plain yogurt, instead of sour cream; med. cheddar, instead of mozzarella; dried Tuscany blend spices for the basil. Threw in chopped fresh tomato for a complete meal. A very versatile foundation for a special treatment of scrambled eggs.

Ghirardelli® Ultimate Chocolate Fondue

Amazing! Out of this world! My daughter wanted a chocolate fondue instead of a cake for her birthday. We used Girardelli 60% cacao (because that's what the store had) with the Girardelli milk chocolate. PERFECT bittersweet-ness that enhanced rather than overwhelm the flavors of the fruits and cookies served with it. It was so easy to make--will never do store bought again. Leftovers keep well in the fridge for later treats. Her friends talked about it for days, she finally packed some of the leftovers for them. WOW!

Simple Turkey Chili

Enjoyed this recipe. Made it with ingredients I already in the pantry: chopped celerty and canned green beans instead of kidney beans, tomato juice instead of water, heaping T of Penzey's Chili 3000 spice mix, 2 T dried chopped onions (I was out of fresh onions), garlic powder (fresh minced is always better). Served with sour cream, mexican cheese, corn tortilla chips and green onions.

Udon Peanut Butter Noodles

Made this with leftover beef/beef broth, carrots instead of red bell pepper. We reserved some of the beef broth for family members who prefer the soupy version. This is comfort food.

Chicken Arroz Caldo (Chicken Rice Porridge)

I have also made arroz caldo with whole chicken pieces. My family asks for this especially during flu season with increased (may double or triple) amounts of garlic & ginger for their medicinal benefits -- antibacterial, antiviral, breaks fevers, clears head congestion, opens airways. More effective than chicken noodle soup.

Chicken Breasts with Balsamic Vinegar and Garlic

Followed directions exactly. Next time will pound chicken breast to even the thickness before seasoning and dredging in flour. I'll try WHITE balsalmic vinegar.

Chicken Pot Pie III

DH says it's the best potpie he's ever had. Used cubed leftover Costco roasted chicken, Cream of celery + cream of chicken condensed soups, a splash of white wine. Instead of frozen veggies, I sauteed minced garlic, onions, chopped celery, chopped carrots and peas. I would've liked more thyme, but DH says this is just perfect.
