Grandma's Five Cup Salad

Reviewed: Jan. 12, 2012
Next time, I will use little or no coconut as my family had issues with texture.

Holiday Cranberry Relish

Reviewed: Nov. 28, 2011
The 5 stars rating is because DH and eldest daughter loved it with raspberry Jello. Just as good the 2nd time with cherry Jello, but will do it raspberry next time. Cut down the sugar to 2/3 cup and it was still too sweet with the jello. Will keep tweaking but its going to be a regular side dish for our special occasion meals.

Make-Ahead Mashed Potatoes

Reviewed: Nov. 28, 2011
Tried it twice. Don't know what I did wrong but the mashed potato was getting too dried and solid, instead of fluffy.

Creamy Cheesy Scrambled Eggs with Basil

Reviewed: Aug. 17, 2011
Used what I had in my fridge/pantry: plain yogurt, instead of sour cream; med. cheddar, instead of mozzarella; dried Tuscany blend spices for the basil. Threw in chopped fresh tomato for a complete meal. A very versatile foundation for a special treatment of scrambled eggs.

Ghirardelli® Ultimate Chocolate Fondue

Reviewed: May 25, 2011
Amazing! Out of this world! My daughter wanted a chocolate fondue instead of a cake for her birthday. We used Girardelli 60% cacao (because that's what the store had) with the Girardelli milk chocolate. PERFECT bittersweet-ness that enhanced rather than overwhelm the flavors of the fruits and cookies served with it. It was so easy to make--will never do store bought again. Leftovers keep well in the fridge for later treats. Her friends talked about it for days, she finally packed some of the leftovers for them. WOW!

Simple Turkey Chili

Reviewed: May 25, 2011
Enjoyed this recipe. Made it with ingredients I already in the pantry: chopped celerty and canned green beans instead of kidney beans, tomato juice instead of water, heaping T of Penzey's Chili 3000 spice mix, 2 T dried chopped onions (I was out of fresh onions), garlic powder (fresh minced is always better). Served with sour cream, mexican cheese, corn tortilla chips and green onions.

Udon Peanut Butter Noodles

Reviewed: Mar. 8, 2011
Made this with leftover beef/beef broth, carrots instead of red bell pepper. We reserved some of the beef broth for family members who prefer the soupy version. This is comfort food.

Chicken Arroz Caldo (Chicken Rice Porridge)

Reviewed: Mar. 6, 2011
I have also made arroz caldo with whole chicken pieces. My family asks for this especially during flu season with increased (may double or triple) amounts of garlic & ginger for their medicinal benefits -- antibacterial, antiviral, breaks fevers, clears head congestion, opens airways. More effective than chicken noodle soup.

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Jan. 23, 2011
Followed directions exactly. Next time will pound chicken breast to even the thickness before seasoning and dredging in flour. I'll try WHITE balsalmic vinegar.

Chicken Pot Pie III

Reviewed: Dec. 20, 2010
DH says it's the best potpie he's ever had. Used cubed leftover Costco roasted chicken, Cream of celery + cream of chicken condensed soups, a splash of white wine. Instead of frozen veggies, I sauteed minced garlic, onions, chopped celery, chopped carrots and peas. I would've liked more thyme, but DH says this is just perfect.

This recipe has made my DH the family's pumpkin pie expert. Followed the recipe but with fresh pumpkin puree. Served with topping of whipped cream.

Taco Casserole

Reviewed: Nov. 5, 2010
Subbed the diced tomatoes and tomato soup with salsa and it was too dry. Next time will do salsa + diced tomatoes. Used taco seasoning from Taste of Home recipe. Used tri-color rotini, instead of macaroni.

Creamy Butternut Squash With Cinnamon Soup

Reviewed: Oct. 21, 2010
Flavorful fall weather treat. Will make it again without the cayenne pepper. Rich creamy texture. Tasted fine with vanilla soy milk; probably could do without the pinch of sugar.

Slow Cooker Chicken Stroganoff

Reviewed: Oct. 21, 2010
Excellent recipe. I used whole chicken cut up pieces (breasts, thighs, legs, wings). I removed the bones as I shredded the chicken before serving. I added sauteed mushrooms. Next time I would only add one packet of Good Seasons dressing mix, instead of 2, for the 8 pieces of chicken. One can of soup and one cream cheese made plenty of sauce, no need to double. Used butter. Served it over egg noodles. YUM! It will be a regular for family gatherings.

Wonderful summer treat. Couldn't make the next fast enough. My daughter add this to her deli meat sandwiches for school, instead of the tart pickles.

No-Guilt Zesty Ranch Dip

Reviewed: Sep. 16, 2010
Just finished making it right now, most of the ingredients already in my fridge and pantry. My health-conscious teenage daughter is doing more than taste-testing that I may not have enough for my work's dip day tomorrow. AMAZINGLY GOOD!
