Buttermilk Pancakes II

Thought I would try a new pancake recipe from this site. My HG pancake recipe is the Fluffy Pancake one. These just wouldn't fluff up for me. I halved the recipe so maybe my measurements were a but off and I used Saco dried buttermilk instead of fresh. I followed the instructions for that as well. I even let the eggs and milk come to room temperature and they were still flat. They tasted fine but were nothing special.

Bacon Ranch Pea Salad

I made this for a work potluck and they gobbled it up!! About 1/2 thorough I kind of stopped measuring everything and it still turned out great! I did just rinse the peas under hot water to thaw and they seemed to do quite well. I did add a dollop of sour cream for extra creaminess and about a teaspoon of garlic powder to spice it up a bit. I think next time I won't use bottled ranch, I think it would be better with ranch made from a packet which I prefer anyway. This was really good, could easily be doubled and very easy to make as is or adapt to our own tastes.

Coconut Cream Pie I

My boyfriend loves all things coconut and I wanted to make him a coconut cream pie but it's still pretty warm here so I didn't want to actually turn on the oven so I was happy to find this recipe. It was very, very easy but I agree with several reviewers that the coconut flavor was not as intense as I was hoping. He loved it but I think the next time I make it I may try using coconut milk instead of regular milk. I looked for coconut flavored pudding in my grocery store but apparently it is not carried around here. Since he liked it, I guess it was coconutty enough for him. This is a really pretty pie too!

Cinnamon Supper Cake

I've been snow-bound for 2 days and craving a coffee cake but didn't have a ton of ingredients around. I just wanted a simple cinnamon cake and this recipe is perfect. I followed the recipe but I added cinnamon to the batter and I like it a lot! This is just a basic cinnamon quick bread type cake. Very simple. Not too sweet not complicated. I did make one little error while mixing the ingredients; I grabbed chili powder instead of cinnamon and started shaking away into my batter!! I caught myself after two shakes and finished up with some ground cinnamon but I think it was a happy mistake! Chili powder gave it just a little extra kick. Lovely little cake

Fluffy Pancakes

Absolutely the best pancakes hands down!! Every year before the kids go back to school, we have an annual pancake supper and this was the recipe I picked this year. Every year I try a new one and this just blew the others away. One thing I did was buy new baking powder and baking soda because I wasn't sure how old my others were. I think it's critical to use fresh ingredients especially the powder and soda. They were buttery, tall, fluffy. Everything a pancakes should be and not too sweet either. I barely mixed my ingredients and let it set undisturbed in the fridge for about 30 minutes. The batter was very thick but nothing I couldn't work with. Love these pancakes!

Strawberry Dream Cake I

This is not a light fluffy cake so if that's what your looking for, don't attempt this cake. I did substitute strawberry cream cheese for the plain kind and it had a great flavor. However, it was very, very dense. So dense it was almost wet but that may have been from my keeping it in the refrigerator overnight. It was more dense than I thought it would be. Pudding like is correct. I only added 3 eggs as the recipe called for and I can only imagine that a 4th might have made it heavier, but, it may actually have lightened it up a bit. I made it for a co-workers birthday and kind of wished I had done a test run as this is the first time I've made this cake. I didn't use the frosting listed but instead frosted ith with a strawberry whipped cream frosting. I liked it but didn't think it was the best I've ever had. I did think it had a good strawberry flavor though.

Mother's Applesauce Muffins

These were really, really good!! I reduced the sugar to 3/4 cup and could have probably gotten away with 1/2. I used whole wheat flour for half of the full amount. I think next time just to be a little bit healthier, I would cut the butter in half as well. They are pretty buttery as is.
