Mom's Zucchini Bread

Cake Mix Cookies VIII

These were surprisingly good! I love to bake and I pride myself on making everything from scratch, but I had a box of cake mix lying around from a gift so I thought I'd give this a try. I used shortening instead of butter to keep them from flattening out. I also added the 2Tbsp of oil and 1tsp vanilla like everyone suggested. Fudgy and delicious!

Mama D's Italian Bread

Loved it. I'm not a beginner bread-baker but I'm not very experienced either. I used my KitchenAid dough hook for the majority of the kneading so that made it pretty easy. I let it rise 3 times as directed. However, I did not mist it. I have used steam baths in the past but last time my bread got CRAZY crusty so I tried without anything this time. It felt really hard coming out of the oven but softened up as it cooled. I'm missing that crispy crust a little but it still tastes amazing. The texture is terrific. Yayyy bread!

Chocolate Cake II

I usually make Sandy's Chocolate Cake, which you can find on this website. However, I didn't have all the ingredients so I looked for one I could make with what I had on hand. I made this as is except for adding a little salt. It was VERY moist, which was terrific, but really lacked in chocolate flavor.

Apple Pie by Grandma Ople

Yep, definitely the best apple pie ever. I did add some cinnamon, and I did not cook the sugar-butter mixture over the stove - I just melted the butter in the microwave and mixed it all together. I would have done it correctly, but I was baking several things at the time and ran out of pans. The sauce thickened up nicely without being cooked on the stove, so I think I'll continue to make it like this. I only used 4 big granny smith's and still had some filling left over. Everyone said it was the best apple pie they've ever had! It's not too sweet and goes perfectly with some sharp cheddar. I'll never make another apple pie!

Easy Sugar Cookies

These had some great points. They are buttery. They rise nicely. They have a great texture. However, overall the flavor just seemed a touch lacking... and for a sugar cookie they didn't seem very sweet. If you plan on frosting these, they would probably be perfect, but if you are looking for a classic sugar cookie that can be eaten on its own, there are much better recipes out there.

Homemade Flour Tortillas

I am someone that loves to make everything from scratch... I make my own chicken stock, yogurt, granola, etc etc, but for some reason it has never occurred to me to make tortillas. So of course, I had to make them right away and I'm glad I found this recipe. I loved these! They're so easy to make. I wasn't about to go buy some lard, so I ignored the description and used shortening like many other reviewers did. Perhaps they would be better with the lard, but they were great with shortening. This recipe makes 24 taco-sized tortillas (about 6" when rolled out). They don't need long to cook, you're really just warming them up: I probably cooked them no more than 20 seconds per side. They're so much better than store bought! I'll definitely make them again. Next time I want to try and steam them like they do in restaurants so they're nice and moist. Thanks for the recipe!

Best Black Beans

So simple but super tasty. Sauteed the onion and garlic in a little olive oil beforehand and used 1 cup of chicken broth instead of the liquid from the can (that seemed kind of gross to me). Simmered for a while as I was making the rest of dinner, probably 20min total. Next time I think I'll throw some corn in. Excellent, simple way to spice up a can of beans.

Simple White Cake

I really love this recipe. I made it as the base to my maple bacon cupcakes, and it was perfect for that. It's sturdy enough to hold up to bacon chunks but still really fluffy and awesome. Make sure you use soft butter and beat the out of it to get it nice and fluffy and full of air! This is my new go-to vanilla cupcake base, no changes needed! The batter was a texture that is new to me as far as cupcakes go - it was so airy and almost like a thick whipped cream consistency. I could have eaten a whole bowl of that by itself! As far as the people that have said they are dry, I think they're probably overcooking them. You need to keep a close eye on your baked goods! Mine only needed about 16minutes in the oven and they came out perfect.

Sandy's Chocolate Cake

I reviewed this a long time ago but I thought I'd update, since then I've made it probably a dozen times. This is easily the best cake I've ever made, it's great as cupcakes or in cake form. It's SO incredibly moist and chocolatey. I'm always messing with recipes, but this one is so perfect I always make it as is. I get SO many compliments on it. For the people who said it's not super chocolatey, I'm thinking maybe they either cooked it too long (dryness always detracts from taste) or used low-quality cocoa powder. I've made it with regular Hershey's and it's definitely great, but it's noticeably better (as anything would be) with high-quality cocoa (Scharffen Berger is easily available around here and also delicious). I like it best with a nice fluffy peanut butter frosting. Today I'm making it with oreo cream cheese frosting for my mother-in-law's birthday. I will never use another chocolate cake recipe... I can't rave enough about it! Just try it, you'll understand : )

Chicken Makhani (Indian Butter Chicken)

As some of the other reviewers said, this is pretty bland with the amount of spices as written (and I am a HUGE wimp about spicy food). I suppose since garam masala is a mix, that different brands vary resulting in some that are spicier than others. Either way, I prepared it as written and it reminded me of creamy tomato soup. Tasty but bland. I added an extra 2 heaping teaspoons of garam masala, a sprinkling of chili powder, about 1/4 tsp of cinnamon, a little extra salt, and a heaping tablespoon of tomato paste. I omitted the cornstarch because my sauce was plenty thick enough. This was my first time cooking anything Indian, so I felt a little lost when it came to the spices, but it ended up very delicious! I will definitely make this again.

Miso Soup

Excellent! Super easy to make. I used a mellow white miso, soft tofu instead of silken, and added shitake mushrooms. It doesn't look very exciting in print but has awesome flavor and is better than any miso soup I've had in a restaurant.

Awesome Slow Cooker Pot Roast

Really good! I was a little skeptical because I like to do everything totally from scratch and using the cream of mushroom soup and dry onion soup mix packet really isn't my style but the flavors were perfect and this was absolutely delicious. I added a whole onion cut in half that I fished out after cooking to add some more flavor. After I removed the heat I transferred the gravy to a saucepan to simmer and added a little flour to thicken it up. Everyone loved it!

Fluffy Peanut Butter Frosting

I never really use a recipe for frosting, and my vanilla/chocolate/cream cheese buttercream frostings always come out awesome. I've tried making PB frosting in the past and it always comes out heavy and gummy and gross. Then I broke down and sought out a recipe and I'm so glad I found this one! It's delicious! I followed it exactly and it was deliciously peanut buttery (not overly so, though) and nice and fluffy. 5 stars for sure!

Blueberry Pie

Awesome pie! I took another reviewer's advice and added 5T of corn starch instead of 3. It was a good call - once it cooled, the pieces came out very neatly. I made it with the Better Homes and Gardens crust. I don't remember using cinnamon in my previous pies but after baking this it's a must. This is my new standard blueberry pie : )

Baked Mac and Cheese for One

Delicious! I left out the worcestershire sauce and hot sauce because I didn't have any, but it was still delicious. So creamy! I saw a couple reviewers saying there was too much sauce/not enough macaroni. I don't think upping the macaroni just a little would hurt it, but I didn't think it was too much. Just make sure you let it sit before you eat it. This is an awesome mac n cheese recipe that I will use as a basis for tweaking my own version in the future : ) Thanks!

Zucchini Cookies

I've made cookies that are more bread-like than cookie-like before, but these were a very funny texture and consistency. They had no crumble to them whatsoever. Someone else described them as muffin-tops, I think that's a better description, but still they're more like bread. Texture aside, the flavor was good and although they didn't exactly get gobbled right up, my boyfriend enjoyed them. I think I'll keep searching for a way to use up my zucchini.

Pumpkin Chocolate Dessert Cake

Amazing! So moist and delicious. As written, the recipe made 24 regular sized cupcakes. Instead of the glaze listed here I made a pumpkin cream cheese frosting that complemented it very well - but the cake is so moist and flavorful itself that it barely needed the frosting. Everyone loved them and I'll definitely make them again!

Stuffed Green Peppers I

This is a good starting point for a stuffed green peppers recipe. I used tomato sauce instead of tomato soup (that does not sound appetizing), turkey sausage instead of beef, and mozarella cheese instead of cheddar. The boyfriend and I loved them : )
