Chicken Tortilla Soup V
I loved this recipe but tweaked it a little bit. I added a full bag of frozen corn, a small spoonful of the onion (next time using onion powder), added several dashes of lime juice, dashes of fajita seasoning, and 1/2 a potato cut into cubes. I also got nervous about just sauteing because it wasn't cooking through so I boiled the soup for about 15 minutes then removed the chicken and shredded it with a fork before returning it to the soup. Once the soup was finished, I put a sprinkle of shredded cheese on top of the tortillas in the bottom of the bowl before pouring soup on it. So yummy!

Chicken Parmesan Casserole
Great easy dish! Made it the way the recipe stated the first time but changed some things the second time: 1) I used Perdue frozen breaded chicken strips (cooked first then cut up for casserole) instead of canned chicken to give it less of a tuna taste/texture 2) use ALOT more of the sauce and distribute throughout the casserole or it dries out

Slow Cooker Thanksgiving Turkey
Amazing! I left it on low for 8 hours and them warm for 2 until it was time for dinner and the meat literally fell off the bones! It was tender and juicy. I doubled the gravy because my turkey was larger then the one called for, then made a roux to thicken it after I removed the turkey from the crock pot. Def going to use this at the holidays!
