Pesto Polenta Lasagna

This was a good recipe but it needed tweaking. I sautéed veggies (onions, mushrooms, red pepper, and spinach), and roasted the polenta so that it would be a little crisper.

Pumpkin Turkey Chili

This is a wonderful recipe! I was hesitant about the pumpkin but it gives it a good texture and flavor. I would highly recommend this recipe. It is easy and delicious.

Italian Salad Croutons

These are great! And this is a good base to start experimenting with. I increased the cooking time so they would be crunchy. Also, I added onion powder and garlic salt (1/2 tsp each) the second time around which I thought made them better. But as is, really good croutons.

Spiced Pecans

This was delicious! I served them in a mixed greens salad, with pear, feta, and a homemade vinegarette. It was delicious. And now we can't stop eating the leftover pecans. Next Christmas I am going to make these and give them out as presents.

Pesto Grilled Cheese Sandwich

Wow! This is good! I made a few changes to make it a tad bit healthier--I took out the American cheese, you don't really need it, and I used a non-stick skillet sprayed with Pam and didn't use the butter. I had this sandwich for three days in a row! Delicious! To make it gluten free, I used Udi's Gluten Free Bread. I don't know if I'll ever be able to go back to regular grilled cheese sandwiches again!

Authentic Louisiana Red Beans and Rice

Delicious! I will be making this again! I could not find the right sausage (and I didn't want to waste time driving to different stores) so I just used Italian sausage, not as authentic, but still delicious.

Vegan Red Lentil Soup

If you like curry, make this dish immediately! It is delicious and so versatile. You can put just about any vegetable in there and it will be wonderful. I followed the recipe pretty much to the letter, but next time I'll add more vegetables. It has a wonderful flavor. I topped it with plain low fat yogurt, which gave it a nice zest. I would highly recommend this recipe.

Soba with Toasted Sesame Seed Sauce

This was a delicious recipe! I did make some changes: stir fried the broccoli and green onions (and added carrots, and snow peas) and added grilled chicken. I also doubled the sauce (which wasn't necessary). It was delicious and we will be making this again soon.

Simple Roasted Chickpea Snack

A very healthy and tasty snack idea. You can play around with the spices to suit your preferences. I think next time I'll double the recipe. It makes so little for having to be in the oven for 45 minutes.

Fire Roasted Tomato and Feta Pasta with Shrimp

This is the best recipe I have made from this site! It is amazing as is, but if you want more heat it would be good with crushed red peppers. The fire roasted tomatoes is a must-otherwise it would be too bland. It is easy and yet you can make it for company.

Seven Layer Dip I

Delicious Black Bean Burritos

This was very good as is. It will become a regular recipe in the rotation of weeknight meals. And it is very versatile. You could add veggies, beans, and so many other things. It is a good base recipe to get creative with.

Double Tomato Bruschetta

Wow! This is the best bruschetta I have ever had. I can't wait to make it again! (To make it gluten free, I made gluten free french bread, which does make this more time-consuming). Hints: I removed the seeds and the inside liquid of the tomatoes. I added extra garlic, and I mixed mozzarella and parmesan cheese. I also let the tomato mixture marianade for several hours. I can't wait to make this again!

Quinoa and Black Beans

Very easy, cheap, and healthy vegetarian option for weekday nights. Also it is easy clean up, which is nice. We put a small amount of light sour cream on top and it really helped. I think next time we will add red pepper. We will be making this again.

Flourless Peanut Butter Cookies

I was very skeptical initially but got this recipe from a friend. They are delicious and very easy to make. I would recommend putting a little vanilla (1 tsp) in them and flattening them with a fork that is dusted with sugar.
