Flourless Peanut Butter Cookies

I was very skeptical initially but got this recipe from a friend. They are delicious and very easy to make. I would recommend putting a little vanilla (1 tsp) in them and flattening them with a fork that is dusted with sugar.

Quinoa and Black Beans

Very easy, cheap, and healthy vegetarian option for weekday nights. Also it is easy clean up, which is nice. We put a small amount of light sour cream on top and it really helped. I think next time we will add red pepper. We will be making this again.

Double Tomato Bruschetta

Wow! This is the best bruschetta I have ever had. I can't wait to make it again! (To make it gluten free, I made gluten free french bread, which does make this more time-consuming). Hints: I removed the seeds and the inside liquid of the tomatoes. I added extra garlic, and I mixed mozzarella and parmesan cheese. I also let the tomato mixture marianade for several hours. I can't wait to make this again!

Soba with Toasted Sesame Seed Sauce

This was a delicious recipe! I did make some changes: stir fried the broccoli and green onions (and added carrots, and snow peas) and added grilled chicken. I also doubled the sauce (which wasn't necessary). It was delicious and we will be making this again soon.

Seasoned Turkey Burgers

Delicious. I made them just as the recipe says and they were great! My only words of wisdom are to not cut into the burger to make sure it is done, because then all the juice runs out. With all the seasoning, I could barely tell that I was eating a turkey burger and not a hamburger.

Spicy Baked Sweet Potato Fries

I would give the original recipe 3 stars but the edited version 4. I cooked the sweet potatoes in the microwave because I was in a time crunch. Then I cut them and seasoned with olive oil, pepper and Lowry's. Then roasted in 425 oven for 30 minutes, turning half way through. They were delicious.

Grilled Asparagus Salad

This was delicious! We can't wait to make it again. I made extra for lunch and can't wait to eat it tomorrow! I made the recipe exactly as written but added a little salt to the olive oil and lemon juice mixture.

Addictive Sweet Potato Burritos

These are good. The taste is unique but quite tasty. I made them one evening, baked half of them, and froze the other half (before baking) for easy weeknight dinners. I never would have thought to add those ingredients together (mustard and soy sauce in a burrito??) but it was good. I did sub black beans for kidney because I like them better.

Delicious Black Bean Burritos

This was very good. But I made some additions: I put some chili powder and cayenne pepper for some heat. Also I used canned green chiles instead of jalapenos. It was very delicious!

Pesto Grilled Cheese Sandwich

Wow! This is good! I made a few changes to make it a tad bit healthier--I took out the American cheese, you don't really need it, and I used a non-stick skillet sprayed with Pam and didn't use the butter. I had this sandwich for three days in a row! Delicious! To make it gluten free, I used Udi's Gluten Free Bread. I don't know if I'll ever be able to go back to regular grilled cheese sandwiches again!

Pumpkin Turkey Chili

Caramels I

This makes amazing caramels! Just as good (if not better) than the boutique caramels you buy for a high price. I made these and gave them in a gift bag to my colleagues for a Christmas present and they were a big hit. I did have to heat them to the "hard ball stage" as I followed the recipe exactly the first time and they came out too runny, but at the hard ball stage, they were perfect caramels. I will be making this recipe every year for Christmas!

Best Steak Marinade in Existence

This is a good marinade. It made our freezer burnt steak taste great! I'll keep this on hand for those times when you need to give your meat a little pick-me-up. I'll bet this would be good with chicken or pork too.

Spiced Pecans

This was delicious! I served them in a mixed greens salad, with pear, feta, and a homemade vinegarette. It was delicious. And now we can't stop eating the leftover pecans. Next Christmas I am going to make these and give them out as presents.

Italian Salad Croutons

These are great! And this is a good base to start experimenting with. I increased the cooking time so they would be crunchy. Also, I added onion powder and garlic salt (1/2 tsp each) the second time around which I thought made them better. But as is, really good croutons.

Vegan Red Lentil Soup

If you like curry, make this dish immediately! It is delicious and so versatile. You can put just about any vegetable in there and it will be wonderful. I followed the recipe pretty much to the letter, but next time I'll add more vegetables. It has a wonderful flavor. I topped it with plain low fat yogurt, which gave it a nice zest. I would highly recommend this recipe.

Refried Beans Without the Refry

These beans are delicious! Better than canned and better than many restaurant's beans. I reduced the salt to 2 tsp and then added about 1 tsp after I had mashed them. Also, used a hand blender and added a dash of cayenne pepper. But they were great without the cayenne pepper, too. I will never buy another can of refried beans.

Jalapeno Poppers of Champions

These were delicious! I followed one reviewer's recommendation and soaked the tooth picks before baking, which helped. They were very flavorful. I will be making these again and next time I am going to try them on the grill.
