Authentic Louisiana Red Beans and Rice

Delicious! I will be making this again! I could not find the right sausage (and I didn't want to waste time driving to different stores) so I just used Italian sausage, not as authentic, but still delicious.

Simple Roasted Chickpea Snack

A very healthy and tasty snack idea. You can play around with the spices to suit your preferences. I think next time I'll double the recipe. It makes so little for having to be in the oven for 45 minutes.

Lemon Lentil Salad

This was a delicious and healthy salad. I will be adding it to our summer rotation of recipes. I served it over a bed of baby greens and it was wonderful. Perfect for hot summer evenings when you don't want a heavy meal to weigh you down.

No-Cream Pasta Primavera

This is a very good pasta recipe. It was light and had good flavor. I didn't change anything on the recipe except I used gluten free pasta from Tinkyada, which held up well when it was sautéed. Next time I might throw in some grilled chicken for a little protein.

Fire Roasted Tomato and Feta Pasta with Shrimp

This is the best recipe I have made from this site! It is amazing as is, but if you want more heat it would be good with crushed red peppers. The fire roasted tomatoes is a must-otherwise it would be too bland. It is easy and yet you can make it for company.

Seven Layer Dip I

This is amazing 7 layer dip! I kicked it up a notch and put a packet of taco seasoning in the ground meat and it was even better. But it is great as is.

Pesto Pasta with Chicken

This was very good as is. It will become a regular recipe in the rotation of weeknight meals. And it is very versatile. You could add veggies, beans, and so many other things. It is a good base recipe to get creative with.

Pesto Polenta Lasagna

This was a good recipe but it needed tweaking. I sautéed veggies (onions, mushrooms, red pepper, and spinach), and roasted the polenta so that it would be a little crisper.

Jalapeno Poppers of Champions

These were delicious! I followed one reviewer's recommendation and soaked the tooth picks before baking, which helped. They were very flavorful. I will be making these again and next time I am going to try them on the grill.

Refried Beans Without the Refry

These beans are delicious! Better than canned and better than many restaurant's beans. I reduced the salt to 2 tsp and then added about 1 tsp after I had mashed them. Also, used a hand blender and added a dash of cayenne pepper. But they were great without the cayenne pepper, too. I will never buy another can of refried beans.

Vegan Red Lentil Soup

If you like curry, make this dish immediately! It is delicious and so versatile. You can put just about any vegetable in there and it will be wonderful. I followed the recipe pretty much to the letter, but next time I'll add more vegetables. It has a wonderful flavor. I topped it with plain low fat yogurt, which gave it a nice zest. I would highly recommend this recipe.

Italian Salad Croutons

These are great! And this is a good base to start experimenting with. I increased the cooking time so they would be crunchy. Also, I added onion powder and garlic salt (1/2 tsp each) the second time around which I thought made them better. But as is, really good croutons.

Spiced Pecans

This was delicious! I served them in a mixed greens salad, with pear, feta, and a homemade vinegarette. It was delicious. And now we can't stop eating the leftover pecans. Next Christmas I am going to make these and give them out as presents.

Best Steak Marinade in Existence

This is a good marinade. It made our freezer burnt steak taste great! I'll keep this on hand for those times when you need to give your meat a little pick-me-up. I'll bet this would be good with chicken or pork too.

Caramels I

This makes amazing caramels! Just as good (if not better) than the boutique caramels you buy for a high price. I made these and gave them in a gift bag to my colleagues for a Christmas present and they were a big hit. I did have to heat them to the "hard ball stage" as I followed the recipe exactly the first time and they came out too runny, but at the hard ball stage, they were perfect caramels. I will be making this recipe every year for Christmas!

Pumpkin Turkey Chili

Pesto Grilled Cheese Sandwich

Wow! This is good! I made a few changes to make it a tad bit healthier--I took out the American cheese, you don't really need it, and I used a non-stick skillet sprayed with Pam and didn't use the butter. I had this sandwich for three days in a row! Delicious! To make it gluten free, I used Udi's Gluten Free Bread. I don't know if I'll ever be able to go back to regular grilled cheese sandwiches again!
