Chantal's New York Cheesecake

Great cheesecake! Didn't have a spring form pan so used two purchased crusts...filled them both from this receipe. Cracked, but probably because I didn't have correct pan... never the less...enjoyed by more people than I'd planned on feeding......

Blueberry Clafouti

I made two for an evening BBQ, one, fresh cherries (pitted them myself) and the other with raspberries, black berries and blue berries. They came out perfectly.. My guests had a choice and chose both with a scoop of good vanilla ice cream. I gave 5 stars because I found this can be mixed in a blender or food processor with great results.... will save time.

Ahi Poke Basic

Very very good. Actually better than what I've had at a local restaurant which is known for their Ahi Poke. I did add a touch of fresh ginger and left out the nuts. I made a small amount (1/2 lb of Ahi) just for me to try. I'll make this again for a crowd.

Dairy and Gluten-Free 'Buttermilk Pancakes'

These were light and fluffy.. I used coconut oil, Almond milk and added fresh blueberries.. They were perfect. Great basic recipe to make your own version of perfection. Also, I didn't have yoghurt, so used a little dairy free sour cream..it worked fine. I think this recipe can be adjusted to what you have on hand and still come out just fine. I gave 4 stars for flexibility...

Mock Ice Cream Sandwiches

AWESOME! Grandkids made these last night and they were easy, not much of a mess and really good.. This is one of those recipes that is much better than you think it would be... We used chocolate graham crackers, cool whip and mini chocolate chips... perfect!

Grilled Asparagus

Incredible ! Really good. Used my garlic infused olive oil, sprinkled on a little kosher salt (it's milder) and some fresh thyme from my garden and grilled for about 3 1/2 min (asparagus were large)... As I might have mentioned, they were really good !

Mexican Baked Fish

Made this (Gluten Free) tonight with Halibut, It was wonderful...my DH had 3 servings and cleaned the baking dish. I wasn't much on measuring, cut the Halibut filet in 3 pieces, spread a thin layer of chunky spicy salsa over the top, threw in a couple handfuls of frozen corn, a bit of shredded cheese substitute (Lactose Free) and topped with about a cup of smashed tortilla chips. Baked at 400 for about 20minutes (maybe the thickness of the pieces caused it to need a bit more time) tented with foil the last 10 minutes so that the chips wouldn't brown too darkly.. My DH isn't much on avacado and I'm lactose intolerent, so no sour cream... but it didn't need anything else.. The perfect flavor, the richness of the fish and the crunch of the chips made this dish, one that I will make again and again... maybe with margaritas next time. Have made again and again.. used Halibut, Red Snapper and Rockfish...Have used a Mango/Peach Salsa with GREAT results. Cheese doesn't matter (can't really taste it) The addition of corn is a crowd pleaser. Sangria is very good with this dish.

Maui Wowie Shrimp

after reading other reviews, I ended up over seasoning .. still excellent, but next time I won't be quite so heavy handed.. I added some Old Bay Seafood Seasoning and it definitely added flavor.. Served with Pineapple Fried Rice and there was nothing left.. The original recipe as written would be very good, but cooking for my family requires a little extra seasoning..

Baked Beans II

Very very good. I used Pork & beans 30oz can and drained about 1/3 of liquid off. I cut my bacon in pieces and folded them into the beans after they were done. I'll make this again....many times....

Peanut Butter Noodles

I used rice noodles rather than udon and they worked just great. I also took the advice of someone else and substituted sesame oil for chili oil. I did add a little hot sauce as well. This dish was simple, quick and delicious. We had cucumbers in sweet chili sauce on the side and it was perfect...

Grilled Shrimp Tacos

I accidentally added a little cilantro by mistake..thought it was cumin..So,we had a cilantro/cumin seasoning. Not sure it made a difference, but these shrimp were excellent.. Sometimes mistakes turn out well….

Cedar Planked Salmon with Dill

Followed the directions and it came out perfect.. Yes, I had extra sauce.. so served it on the side.. My guests put it on the grilled asparagus and I think possibly even the bread.. It was that good! Have made it twice so far and will make it again.. One of my favorites grilled salmon recipes.. We have salmon a lot here in the Pacific Northwest…. Just made it again and this time I was a little heavy handed on the dijon mustard..It was still very good, but the sauce can easily overwhelm the delicate flavor of the salmon.. Be careful..

Tejano Style Shrimp Cocktail

Made this 2 days in a row for different parties... doubled the recipe, added chunks of avacado both days.. 2nd day, had less time so, used ready made salsa instead of tomato sauce... I have to say, it was just as good, if not a little better. Did not have leftovers either day and numerous comments about how great it was. Both parties were large group potlucks and the Tejano Shrimp Cocktail was the most popular both times. This recipe is a real Winner!

Salmon with Lemon and Dill

I cooked Salmon and Ribs for a party last night.. had 12 filets and none were left.. I can't tell you what they tasted like, I didn't get any... based on that, I'm giving 4 stars.. I used olive oil rather than butter.. Made 6 racks of Ribs too and any leftovers were taken by my guests.. Either, everyone was really hungry, or I'm a heck of a good cook!

Ultimate Twice Baked Potatoes

My 11yr grandaughter made these on Christmas.. with no help, just a recipe.. they were amazing. She had little dishes of extra toppings ... french fried onion rings, various cheeses, olives, mushrooms.. bacon bits and a few other inventive ideas like chocolate chips and mini marsmellows that not everyone tried..

My Chicken Pho Recipe

Great basic recipe and very easy.. I needed to change it a bit to make it work for my diet.. used vegtable stock instead of chicken stock.. used halved large prawns instead of cooked chicken... added just a bit of fresh ginger and topped with fresh cilantro when serving.. To keep the recipe Gluten Free, I used the noodles I had on hand, which were sweet potato noodles from Korea.. Rice noodles would have worked nicely if I'd had some.. I will make this again and again..

Lentil Salad with a Persian Twist

Excellent! I have to admit to a couple of changes due to dietary requirements. I did not use canned lentils..I cooked my own to the tenderness I prefer and I used scallions instead of red onions. This is a perfect summer salad..great for picnics and suitable for a vegan or gluten free diet..I will make this again and again.. maybe trying different salad dressings each time.. I'm a bit adventuresome..
