Ultimate Twice Baked Potatoes

My 11yr grandaughter made these on Christmas.. with no help, just a recipe.. they were amazing. She had little dishes of extra toppings ... french fried onion rings, various cheeses, olives, mushrooms.. bacon bits and a few other inventive ideas like chocolate chips and mini marsmellows that not everyone tried..

Salmon with Lemon and Dill

I cooked Salmon and Ribs for a party last night.. had 12 filets and none were left.. I can't tell you what they tasted like, I didn't get any... based on that, I'm giving 4 stars.. I used olive oil rather than butter.. Made 6 racks of Ribs too and any leftovers were taken by my guests.. Either, everyone was really hungry, or I'm a heck of a good cook!

Marinated Baked Pork Chops

Taste was good, but recipe didn't mention draining off juices.. sauce was diluted to broth.. too bad it would have been better a little thicker, and I didn't have time to put it in a pan and reduce it to a thicker consistency. Also, cooking time is a little off.. I cooked for 30 min, then added remainder of sauce and cooked for only 15 more minutes. My husband liked them, but I found the pork chops to be too dry.. Next time I will only cook for 30 minutes..

Broiled Lobster Tails

Came out perfect.. I basted with olive oil due to dairy allergy.. added just a touch of garlic salt rather than regular salt..sprinkled a little smokey paprika.. Wonderful! I needed about 12 minutes due to the size and also I had the oven rack down two from the element.. that way the lobster cooked evenly and did not brown too much on top. The lobster meat was pulled from the shell (still partially attached) sitting on top of the shell to cook

French Toast Bake

GLUTEN FREE DAIRY FREE OPTION ...Excellent. used gluten free cinnamon bagels, dairy free butter and Almond milk. I didn't have time to leave it overnight, but it was wonderful baked the same morning. I actually cooked the blueberries in it for the full time accidentally and they came out plump and delicious. I've made this twice now with requests for more..

Smoked Oyster Spread

Yumm.. Made this for a quick lunch. Added a little mayo as suggested by another review. Also added a chopped scallion and used Tamari soy sauce rather than worchester (because of allergy) I also found that using my small food processor made this a snap to make and the texture was just perfect for my purpose.

Barbequed Ribs

Made these tonight and they were great. I did one thing a little differently.. put the rub on the ribs before baking.. wrapped in foil and baked at 300 for 2 hours.. then opened the foil and after straining off some of the fat, basted with sauce, turned up the heat to 350 for about 12-15 minutes. I was a bit rushed for time or I would have grilled them.. They came out moist, fall off the bone, cut with a fork tender. The flavor was to die for.. Got home at 3:30pm.. Had an amazing meal on the table before 6:00pm... Didn't know a man and a teenager could eat a whole rack that large, along with salad, beans and rolls... Where do they put it???

Grilled Lime Cilantro Ahi with Honey Glaze

Was in a hurry when mixing up the marinade and mixed in ALL ingredients, including the honey, cilantro, everything.. put in the Ahi ... into the fridge .. then plans changed and couldn't cook it until lunch the next day... Looked at the recipe again and realized what I'd done..OMG it was wonderful. I was careful when grilling, so it was heavily browned, not burned (honey burns easily) came out perfect.. served with rice and the leftover marinade (cooked) surrounded with tropical fruit and a wonderful light Sciilian white wine .. Perfect summer meal.

Conchi's Sangria

Great flavor, loved the touch of cinnamon. I would Definately recommend using whole cinnamon sticks... not crushed. This way, you can remove them before the flavor becomes overwhelming. I left them in overnight, but removed them a few hours before serving. Replaced the bananas with slices of orange and Lemon. Thought the bananas would be too soft. You could pretty much add any fruit you like and also a bit of brandy or peach schnapps, instead of rum, if you prefer.

Tejano Style Shrimp Cocktail

Made this 2 days in a row for different parties... doubled the recipe, added chunks of avacado both days.. 2nd day, had less time so, used ready made salsa instead of tomato sauce... I have to say, it was just as good, if not a little better. Did not have leftovers either day and numerous comments about how great it was. Both parties were large group potlucks and the Tejano Shrimp Cocktail was the most popular both times. This recipe is a real Winner!

Cucumber Crunch Salad

It was cruchy and looked wonderful, but flavor was a bit watery... so drained off most of the watery liquid, added 1 TBLS of Sushi Vinegar (rice vinegar with sugar added) mixed and served about 2 hours later... Perfect flavor, everyone raved about how good it was.

Cuban Banana Casserole

Very easy to make, used a dairy free butter substitute and it worked just fine. Made just a small amount to test the recipe.. This will be perfect on French toast for a special brunch I'm planning. I did add a touch of vanilla before baking. Excellent flavor, although quite sweet (but that will work for the french toast)

French Orange Poached Pears (Poire Avec Orange)

Taste was nice, but pears fell apart. I could not core a pear without cutting it in half, so my pear did not look anything like the photograph. Would not try this for guests without testing it ahead of time.. I won't make this again.

White Peach Sangria

I had 2 small glasses and suffered the next morning with a headache... I guess it was good... it certainly tasted good... I used a very nice semi-dry white wine, peach schnapps instead of vodka and no sugar due to the sweetness of th schnapps. Everything else as directed by the recipe. Ate quite a few peaches ... maybe that caused the headache... they were soaked in schnapps and wine.. Will try this one again... maybe I'll just have one glass next time.

Honey Baked Chicken II

I saw this recipe and thought "it can't be that good, It's just chicken...." Well, it is! This is a perfect Gluten Free, Dairy Free (if you use a butter substitute) meal that will please the entire family. My butcher cut up a whole chicken for me and I found some wonderful local honey. I cut the butter amount down, taking advice from previous reviews, used a Honey Dijon mustard, green curry paste (don't have curry powder), no salt was necessary. Baked at 350 for 30 min and 375 for 30 more min. I even threw in a sliced onion.. everything came out carmelized beautifully and delicious. I served the chicken with Jasmine Rice and fresh corn on the cob (baked the last 20 min.with some sauce brushed on, then rolled in foil)

Sweet Grilled Corn

Wonderful recipe.. Made a few changes that works great for someone with a dairy allergy. I used a combination of olive oil and non dairy butter substitute with fresh herbs. Basted the corn and wrapped in foil about 2 hours before grilling.. this gave the corn time to absorb the flavors. Will definately make this again. May even try some other herbs or adjust flavors, just for a change...

Mexican Baked Fish

Made this (Gluten Free) tonight with Halibut, It was wonderful...my DH had 3 servings and cleaned the baking dish. I wasn't much on measuring, cut the Halibut filet in 3 pieces, spread a thin layer of chunky spicy salsa over the top, threw in a couple handfuls of frozen corn, a bit of shredded cheese substitute (Lactose Free) and topped with about a cup of smashed tortilla chips. Baked at 400 for about 20minutes (maybe the thickness of the pieces caused it to need a bit more time) tented with foil the last 10 minutes so that the chips wouldn't brown too darkly.. My DH isn't much on avacado and I'm lactose intolerent, so no sour cream... but it didn't need anything else.. The perfect flavor, the richness of the fish and the crunch of the chips made this dish, one that I will make again and again... maybe with margaritas next time. Have made again and again.. used Halibut, Red Snapper and Rockfish...Have used a Mango/Peach Salsa with GREAT results. Cheese doesn't matter (can't really taste it) The addition of corn is a crowd pleaser. Sangria is very good with this dish.

Excellent..... used sushi rice vinegar (already has sugar added) minced ginger and a bit of salt. Perfect, not too sweet... the sesame seeds were a nice touch... used a combination of black and white seeds....

Caramel Apple Pork Chops

Used some of the comments from other cooks.. marinated w/soy sauce & apple juice... after sauteing onions, browning pork chops, put all in baking dish, covered with apples and sauce (w/corn starch and apple juice added for thickening)..then foil. Baked for 40 minutes at 375. removed foli, sprinkled with chopped pecans and baked another 5min. Came out wonderful. Onions and apples were a nice compliment to the pork and the sauce was not too sweet. I did double the sauce recipe.
