Easy Lasagna II

LOVED it! Used 12 lasagna noodles, and about 10 oz. of shredded Mozzarella cheese. It was still very rich. Sometimes I get tired of Lasagna leftovers, but not this one!!

Cream Cheese Mints

These tasted pretty good, but did not get hard! I chilled them as it says in the instructions. When I took them out of the fridge, they softened up and were kind of like balls of frosting. I followed this recipe carefully, and would really like to know where I could have gone wrong.

These are heavenly. Smooth and creamy. After being cut in squares, it sort of looks like fudge but is creamier than fudge. Made these in a glass pan. They were a little bit difficult to cut, but otherwise great. I will make these as often as I can.

Old-Fashioned Potato Soup

This is really good! I have never made a recipe before where you use onions as part of making the "white sauce" (butter, flour, milk mixture). I like that technique. Although it is a great recipe, I may try either reducing or eliminating the chicken boullion next time. That way it will be closer to the potato soup my mom made when I was growing up. I think that recipe may have come from an old Betty Crocker cookbook. I added one stalk of celery to my soup, and sautéed it along with the onion. I added one carrot (the recipe calls for carrots) even though I have never made potato soup before using carrots. Great recipe! You won't be disappointed!

The Best Rolled Sugar Cookies

I make these every Christmas and sometimes for Valentine's Day. Great recipe. I use a little less baking powder than the recipe calls for because I don't want the cookies to swell up too much when they bake. Also, I discovered that you can double the amount of vanilla extract the recipe calls for, which makes them even better!!

Looks great. Tastes great. Easy to make. Who could ask for more?!!! I tried approx. 3 fudge recipes, and this was my favorite. I would make it every month if there wasn't such a thing as calories!!!!! : )

Chantal's New York Cheesecake

I have made this three times now. It tastes great, and is fairly easy to make. I have a couple of comments though. First of all, I always end up with too much batter to go in the pan (using a full sized Nordic ware spring form pan). When the recipe says "15 graham crackers" do they mean the large rectangular graham crackers that are made up of several sections? I usually use 12 that size. Also, my cheesecakes always crack no matter how carefully I follow the directions. I am not sure what I could do to prevent this.
